Add sugar, a tablespoon at time, beating well after each addition. Add vanilla and water; Continue to beat until the mix lure will hold stiff peaks. Just about the only tiling she has "flubbed" on, she says, is a lemon meringue pie, but she is sure she will whip it yet. Her father, a pressman at lhe Herald and News, reports she a dandy cook. Her mother is cashier for Pacific Northwest Bell. There Is a brother Steve, 16, in the family so Joan gets opportunity to use her cooking prowess. She will be a freshman at Klamath Union High School next fall. Gail, 14, is fast' becoming an expert at the sewing machine and has been making part of her clothes since she was in the fifth grade. Needles and thimbles fas cinated her "hack when" and she was fortunate to have an older sister, Sue Ann, now 16, who liked to sow. bail watched her and was soon making skirts for herself. More and more housewives are asking for lamb at their meat counters and are learning deli cious ways to serve lamb. Pineapple Chunks Combine onion, garlic and sea sonings with lemon juice and hon ey. Marinate lamb in this mixture several hours or overnight.' To cook, alternate pieces of lamb with Pineapple Chunks on skew ers. Barbecue aoout 15 minutes, turning frequently, or broil in oven. Serves 4-6. LAMB SIIISII KKBAH With Pineapple Glaze (Makes -8 Servings) 2 pounds lamb .cubes for ke babs Mushrooms green peppers 1 No. 2 can (1 lb. 4',i ozs.) pineapple chunks or slices V cup vinegar Vi cup catsup I ,i cup brown sugar Vi teaspoon seasoning salt Vi teaspoon ground ginger 2 tablespoons soy sauce 2 tablespoons cornstarch V cup water Drain pineapple saving syrup. Combine syrup (about 1 cup I with vinegar, calsup. brown sugar, sea soning salt, ginger and soy sauce. Pour this marinade over two inch lamb cubes for kebabs. Cover and place in refrigerator (or 12 hours or overnight. Prepare other foods for ke babs, clean mushrooms, cut green peppers into squares and parboH d minutes, unis prevents pepper breaking when tlireaded on skew ers.) Remove lamb cubes from marinade and thread on skewers to partially cook. Blend cornstarch and water in a saucepan, stir in remaining marinade and cook un til thick and clear. Remove meat with tongs and rethread on skew- crs with mushrooms, green pep per and chunks or quarter slices of pineapple. Continue grilling, brushing with glaze until cooking is completed. Total cooking time will be 15 to 20 minutes 3 to 4 inches above glowing coals. Allow 3 or 4 two inch lamb cubes per serving. BAUHKQl'ED LAMB SPARKRIBS (Makes 4 Servings) 2 pounds lamb sparcribs Salt and pepper H cup butter or margarine l'i teaspoons salt 1 teaspoon cinnamon 1 cup firmly packed brown sugar i teaspoon ngtmeg i i ii in. , Vi cup orange juice 1 lemon, thinly sliced 1 cup pitted, chopped dried prunes ',i cup chopped dried apricots Thread lamb on rotissene spit. Sprinkle lamb with salt and pepper. Rotate several hours or until well done. While meat is cooking, prepare sauce as follows: Melt butter or margarine: add salt, cinnamon, sugar, and nut meg, stirring until smooth. Add remaining ingredients, cover and cook over low heat 15 minutes, stirring occasionally. Brush mix ture over lamb during last half hour of cooking. Serve with re maining sauce.
