They are lightweight, easy to store, waterproof and ever so versatile. Hot soupe hit the spot (or lunch or supper or as a late evening warmer upper. If the sun is too scorching for hot soup, then make cream of leek or green pea soup and chill it. If time is at a premium, make the soup at home and carry it aboard in a vacuum container. On board, use the cream soups, such as cream of leek and cream of mushroom for making saucer. You'll find recipes right on the aluminum foil envelopes. With a carton of sour cream, you can mix up a dip with the greatest of ease. The basic pro portions are one pint sour cream and one package dehydrated soup mix. Use either spring vegeta ble, cream of leek or onion. Mix and chill it for two hours. If you are out just for the dsy, make the dip at home and FOR SALADS Bleu cheese dressing is good on salads or vegetables. Stir i cup of instant nonfat dry milk into '.2 cup of water. Add 1 garlic clove, minced, U cup of crum bled bleu cheese, 2 tablespoons of salad oil, 1 tablespoon of lemon juice and ' teaspoon of salt. Shake well. Chill before serving. Makes about 1 cup. transport it in a vacuum j u g, Bring along a tightiy covered can or box of potato chips and a container of crisp relishes. Mocha sundae sauce is quick and easy to make. Pineapple Cake Luau Favorite Sweet Lei Lani Pineapple Cakei is as refreshing as the fragrant scent of trtpical flowers. It lives up to its name which means 'heavenly flower." Crushed canned pineapple is the impor lant ingredient to provide tex ture and moistness to the cake. Bake the batter in two layers then split and fill with rum ac cented whipped cream and pine-1 apple. To add more glamor to the cake decorate the top with pineapple tidbits and a whimsi cal paper crown. This pincapplei cake will be the star of the menu for a luau under the stars or a patio party. SWEET LEI LAM PINEAPPLE CAKE 1 18'j-ounce) can crushed pineapple 1-3 cup water teaspoon vanilla 3 eggs, separated 1 cup sugar 2': cups sifted cake flour 2 teaspoons baking powder l2 teaspoon soda li teaspoon salt a cup shortening Pineapple Lei Lani Cream Combine undrained pineapple, water and vanilla. Beat egg whites, adding cup sugar grad ually until stiff peaks form. Re- sift flour with baking powder, soda and salt. Cream together shortening and i cup sugar thor oughly. Beat in egg yolks. Add crushed pineapple and dry in gredients to creamed mixture al ternately. Fold in beaten egg whites. Divide batter between two greased and floured nine-inch lay er cake pans. Bake in moderate oven (350 degrees F.) 30 to 35 minutes. Cool thoroughly. Split layers in two to make four thin layers: fill with Pineapple Lei Lani Cream, saving some for top Chill until serving. Makes 10 to 12 servings. PINEAPPLE LEI LANI CREAM W hip l'i cups whipping cream with ' cup sifted powdered sugar until stiff. Fold in I (13'j-ouncei can crushed pineapple, very well drained, and two tablespoons white or dark rum. Note: If all purpose flour is used reduce measurement to 2'4 cups. Cupcakes For Two Here's a recipe with many mer its. It is a cupcake recipe de veloped especially for single peo ple or for couples living alone. While most cupcake recipes make 18 to 24, this recipe makes only 8 cupcakes. They keep well and freeze well. In addition, the cup cakes are made with corn oil and therefore have all the benefits of liquid com oil. PERFECT CITCAKES 1 cup sifted flour I teaspoon baking powder ' teaspoon salt 1 fgg ' cup sugar i teaspoon vanilla U cup corn oil U cup milk Sift (lour, baking powder and salt together. Beat egg; gradual ly add sugar, beating untU fluffy. Add vanilla. Combine corn oil and milk in measuring cup; whip with fork until creamy. Add dry in gredients to egg mixture alter nately with oil and milk, beat ing until smooth after each addi tion. Pour batter into paper-lined or greased and floured muffin pans. Bake in 350 degree (mod erate) oven until cakes test done, 20 to 25 minutes. Frost as de sired. Makes about 8. Rum Pie Here's a recipe for a zesty dessert that will perk up any sum mertime meal. It's Strawberry Rum Pie. 1 quart strawberries, divided 1 cup sugar 1 cup water 3 tablespoons cornstarch '2 cup Dark Bacardi 9-inch baked pie shell 1 cup heavy cream, whipped Wash strawberries; hull. Sim mer one cup strawberries, sugar and 2-3 cup water (or 10 minutes. Blend remaining 1-3 cup water with cornstarch; stir into cooked strawberries; add Bacardi; cook until thick and clear, stirring con stantly; add uncooked berries; cool; spoon into pie shell.
