Use Jelly For Decor Combine the tondemess of rich coffee cake with the slight erunchincss of a streusel topping and the melting sweetness of dots of jelly or jam, and you have a Polka Dot Coffee Cake. Add its fragrance as you take it from the oven to the aroma of hot coffee, and you have the makings of a fine Sunday brunch or coffee klatch. The Polka Dot Coffee Cake hasl an easy-to-make biscuit mix base with added flavor and richness. The jelly or jam can be any kind you like, but the cake prettiest if you use a variety ol flavors in contrasting colors. Ar range the "dots" so that there will be two different colors on each slice. Suggested light col ors are peach, pineapple and ap ricot preserves: orange marma lade; apple, currant and quince jelly. For dark colors, use grape strawberry, raspberry, blueberry. blackberry, and black raspberry preserves or jelly. This is an ex cellcnt way to use up s m a 1 1 amounts of a variety of jellies or jams.
