Later will' come the old-fashioned Wlnesap, the Albermarle Pippin of Virginia, or, as they know It on the west coast, the yellow Newtown, those being saved for th lsst of the winter because they store better. , Apples are grown on farms almost everywhere In the United States, but the great commercial orchards ar th the Pacific northwest. In the nor thern tier of states Including Michi gan, Ohio, New York, and New Eng land, In the Middle Atlantlo area, which Includes Virginia, West Vir ginia, Pennsylvania and Maryland, and In the Ozark regions of Arkansas and Missouri. ' . Tastes differ, but nearly all of the varieties mentioned are good "eating apples." The Rome Beauty, however, si valued chiefly as a baking apple. The Baldwin la considered a general purpose apple. Tha Jonathan and Northern Spy, among others, are also considered excellent for sauce and pie, as well as for eating raw. In early times In this country apples were valued chiefly for making cider and vinegar. RECIPES Pork Chops de Lore, (With apples, potatoes, and onion) S pork chops 5 medium-sized apples, pared and cored 4 whit potatoes, medium slss 6 onions, cut In half 8 teaspoons salt teaspoon pepper IVi cups boiling water Flour. A large baklnp dish Is necessary for this. If a casserole is not available, a roaster with a cover may be used. Grease the baking dish. Out th on ions In half, and place them In the bottom of the dish. Sprinkle with salt, core the apples. Cut each apple Into 4 or 6 rings, and stick the end of a pork chop through these rings. Then piece the pork chop and apples over the layer of onions and sprinkle lightly with flour. Flu up the apacaa with the potatoes, thinly sliced. Add the remaining salt and th pepper. Pour In the boiling water and oover the baking dish. Bska until tender, which will take little over 1 hour. Then remove th cover of the baking dish and continue the baking until the top la a rich, golden brown. Apple Salad. Select medium-sized, firm, tart ap plea; psre and core. Cook In a cov ered pan in sirup mad in proportion of a cups water and 1 cup sugar. Us enough sirup to oover the applea. After cooking, drain the apples, chin, and fill tha center with cottage or cream cheese which haa been mixed with ealt, paprika, and a little freshly chopped green pepper. or form tne cheese Into balls, roll In ground nuts and plaoe beeld the applea.
