Th qualities of a good aspic ar strength of flsvor, transparency and delicacy of texture, that is. as soft at possible, though abl to stsnd up. Asple Jelly From Consomme, Tsk Ct cupful of cleared con somme, on to two ounce of gelatin, one-half to on cupful of cold water. Th quantity of gelatin depends upon th solidity desired. Let the gelatin stsnd in the cold water until complete ly absorbed, then pour over th con somme hested to the boiling point . Delicate Aspl Jelly. Clean a chicken about a yesr old, cut up as for frying, cover with cold water, heat quickly to the boiling point, then let simmer until tender. Strain off th broth through a double cloth.
