T hat is the background inf or- m ation which we have received on the “m ore-w heat In b re a i Idea. To test first-hand the eat ing qu ality of the m ore-w heat bread, ten loaves of D illons’ new “ F arm B read” w ere air-express ed from H utchinson, Kansas, to Pendleton. Oregon. The execu tive com m ittee of the Oregon W heat G row ers le a g u e and the m em bers of the Oregon W heat com m ission w ere holding a joint m eeting on M arch >31, w hen the Dillon bread was given a “teste te st” by these bread consum ers. A lthough the bread was three days old, it was not d ry or stale. The unanim ous opinion of those a t the m eeting w as th a t the bread w as superior in taste to the average bakery product. Desirable qualities of th e loaf were, the firm tex tu re, pleasant taste, and thick slices. All at the m eeting agreed the bread tasted m ore like the home-made pro duct. I t w as also pointed out th a t this was not a specialty^ loaf as it weighed 22^» ounces com pared to the average 21 ounce loaf and 9old for on y one cent a pound higher. After tasting the F arm Bread the w heat league com m ittee asked the W heat Commission to prom ote the m ore w heat prln- clple w ith the bakers in Oregon A cam paign has started w ith th e targe bakeries in Oregon. They have the Dillon form ula for farm bread and c6n w ork out In th eir own bakeshop a process by v/hich m ore flour can be added to each loaf. Dillons have added six pounds of whole w heat flour, ten pounds of w hite flour and subtracted nine pounds of w ater from their form ula. T he sim plicity of the idea may defeat It.
