What a Salem Merchant is Doing ALL FOll' SALEM'S BENEFIT. Cold Storage anil led Making Ed. Cross' New Plant. Last spring, it will bo remem bered, Ed. 0. Cross, Salem's enter prising market man, made a tour of inspection to San Francisco and other points, to investigate tho mat ter of putting iu a cold storage aud ice-making plant. After two weeks research among all the largo and Btnall plants, ho returned home aud decided to put in what ho considers the best In the world, Dillenberg's direct expansion system. Mr. Uill enberg is considered tho best au thority ou the coast ou these ma chines, aud has himself been here t-everal weeks superintending the putting up of this plant, of which wo will uudeavor to give a compre hensive description. Tho rooms aro built of 11 iuch walls, which consist of four thick nesses of matched lumber, including three air spaces, which are lined with tho heaviest building paper. Several coats of insular paraphilia paint makes the enclosure about as niarly impervious to heat as is pos sible. Tho btructure contains 22,000 feet of lumber, and has required from ten to fifteen men overa month to build it. The pork room is 10x10 feet, and will hold 100 dressed hogs. The beef room is 10x31 feet and holds SO dressed beeves, while the mutton aud veal room is only 8x8 feet, but holds 00 dressed animals. These rooms aro iu tho rear of Mr. Chops' State street market, while back of the same has just been put ui) a corrugated iron building 22x00 feet, for engine, boiler and till the now machinery. To start with, a new forty-horse boiler has been hero neatly bricked up in modem style, which furnishes the hteam. A new 21-horso horizontal .Russell engine has just been put in by Mr. A. Mitchell, their enterprising agent. It is u beauty, ami does all tho work easily. Full sets of shafting and counter-shafting carry the power with belts to the various machines. HOW IS Till! COM) lMtODUCED? This is the question which every body will ask, and as a Jouknal re porter got an accurate account of Mr. Cro3s, he will endeavor to make it plain to all readers. In the first place, let us say that the cold is all produced by the expansion of liquid ammonia into a gaseous state. This liquid ammonia is carried by a pipe from the storage tank into what" Is called tho ammonia receiver, where it is subjected to a prcssuro of 150 lbs to the square inch. This great pres sure expends the chemical through a fine spiay valve, with one-eighth of iiu inch opening, which opening Is nearly closed by a cone poiut. This transforms It into gas of the highest rarity. This gas is forced through 1500 feet of piping in tho cold storage rooms by the immense pressure. Tills becomes so cold as to form fnwt on f ho colls, und thus cools the rooms through which they pass. After this process the gas comes back through the return plpo to the ammonia pump, which sends it at a pressure of 150 pounds to the con densers overhead. Theso condensers consist of colls of plpo with cold water passing over thorn, and thus the gas Is distilled back luto its orig. iual liquid state, ready to repeat Its work. As tho gas Is thus pumped to the condensers at such high pressure tho cylinders become so hot that it is nrccsary to havo a stream of cold water Mowing over them constantly. There Is a track with rolling hooks from outside tho front door, runs through the shop and Into the different rooms, where they can be switched ofl to their places. A tec tion of this track is connected with an improved Fairbanks scalo in tho shop, thus making it possible to weigh each piece as it comes in. Outside the meat ic elevated by pul ley, so there is scarcely any hand ling requited. To give an idea of how thorough ly this institution does its work, a test was made. After putting In twenty-five head of warm meat, the room was reduced from a tempera ture of 04 dpgrees to 30 degrees In Iciss than 24 hours. The average temperature will be about 38 degrees. Hole the meat cau harfg for weeks and grow better every day. It will be absolutely dry on the surface, aud no meat smell whatever can be discovered. When tho machinery Is shut down at night the tempera ture in the rooms rises only four degrees in twelve hours before start ing up the next .morning. This plant has been put in at an expense of not less than $7,000, and Mr. Croos can feel -truly proud of having what Mr. Dillenberg pro claims the best built and most per fect working plant ou the Pacific coast. This statement be is willing to back up with a fcJOO forfeit if any other concern wishes to contest the point. It Is truly a triumph of mod ern inventive geuius. Consumers of meat iu the capital city have ample reason to feel gr.ileful for this grand improvement. It Is for their direct benefit, aud they should not fail to appreciate it. Mr. Cross will he pleased to show any one through aud point out Its workings. TUESDAY NIGHT'S FIRE. A Frame Building on Commercial Street Burned. Tuesday evening just before mid night a police oflicer discovered an intense smoke in the confectionary store of Frect V. Cooper, the young blind man, and on breaking open the door the whole room seemed to buist out in ilames. The alarm was immediately given aud tho Are de partment was soon out aud at work, but as everything was dry, the building could not be saved. Mr, Cooper says it could only have caught from a spark or cigar stub, as no light or fire was in the build ing. The statement that it origin ated from the gasoline peanut roaster cannot bo true, as the gaso- lluo was all burnt out at 8 o'clock last evening, and could not be refill ed, as Mr. Cooper was entirely out of that infiamabla article. The brick building occupied by Barr & Petzel checked the fire ou the north, although the Ilames had caught in the awning of the Lewis restaurant beyond. The losses are, Fred V. Cooper, ?10y(); J. P. Spauiol, tailor, 5-1200; Sing Hop Co., tailors, ?800. Cooper bus enough insurance in the Beeler agency to cover about half his loss; Spaniol also has $lu00 In the Beeler agency, aud tho Sing Hop Co. has $500 in the State Insurance company. Samuel Adolph owned tho build ing, and will no doubt replace it with a substantial brick block. Mr. Spaniol and family lived In back of the tailor shop, uud had a very nar row escape. Tho Second Regiment. A competitive dilll of the non commissioned olllcers of the com panies was held yesterday evening. There were sixteen contestants for the medal, which was won by D. E Yoran, sergeant in Company C, of Eugene. Before the competitive drill the Eugene Mariue Cadets gave tin ex hibition drill in Willson avenue that was truly an excellent ono and showed that the boys were well trained, even if they were little fel lows. At 8 o'clock the battalion had their evening dress parade, which was held in the usual manner. Af ter the parade Col. Lovell gave a fine creditable exhibition of volloy firing. Tho last few volleys were a- bout perfect, equaling tho perform ance of veteran troops. The Marine Cadets gave a line ex hibition of skirmish firing, which with the firing of the cannon gave us a realistic idea of what war would look like. League Base Ball. About 1500 people were present yesterday at the ball grounds to witness the Portland and Spokane leugue teams play ball. As the teams give all sort of excuses for their exhibition and are going to do so much better today we forbear making comments. We do not print the score of the game as no one would take the least interest in it. Badly Hukmcd. Yeslerduy morning a frightful accident hup pened to little Cora Dawson at her home, No. 540 High street. She dropped a lighted match on the side walk and in an Instant her clothing was afire aud she was enveloped in ilames. Mrs. Dawson heard Iter screams and rushed out with a little baby iu her arms and attempted to extinguish the lire, butshe was bad ly excited. Mrs. Martin, who lives In the same house, threw a blanket around the girl aud put out the fire, but not until it had consumed the little one's dress, with tho exception of a narrow strip in tho front. Her arms and back were burned to a blister aud tho skin camo off. A physician was called and he soon had her restlug easy aud he buys with careful treatment tho girl will recover. Mrs. Dawson's left hand was badly burned, which is very un fortunate for her as alio bus to take in washing, AimiVED.
