The United States Department of Agri, culture endorses the use of paraffin coat ing for cheese. There is no longer anv doubt about the value of paraffine coating in preventing evaporation and consequent loss of weight in cold cured cheese. Experiments recently made by the United States De partment of Agriculture prove conclusi. I vely that cheese coated with paraffine not only holds its weight indefinitely, I but is free from taint and much improved in flavoi*. In Bulletin No. 49, just issued bv the United States Department of Agricul-1 ture, is found a full ieport of tests made j to finally determine the efficacy of para ffine, of which the following is an extract: “VVithin the last tew years the custom of coating the cheese with an impervious layer has been suggested, with the ob ject mainly of preventing the develop ment of mold. For (his purpose paraffine has been found to be the most suitable agent. The application of such a layer to thecheese not only prevents the growth of mold spores by excluding air, but ma- , terially retards the rate nt which the | cheese looses its moisture. It has isaueda bulletin called "The Dairy Cow." written in language that school children can understand. The study of the cow by the future dairymen and women of the state will clarity many of the problems that will come up in their lives on the farm and among the dairy cattle. A cow cannot maintain the vital force necessary for profitable work if she is forced to s|>end the nights in the pasture or the ofien yards.
