ing for cheese.
There is no longer anv doubt about the
value of paraffine coating in preventing
evaporation and consequent loss of
weight in cold cured cheese. Experiments
recently made by the United States De
partment of Agriculture prove conclusi. I
vely that cheese coated with paraffine
not only holds its weight indefinitely, I
but is free from taint and much improved
in flavoi*.

“VVithin the last tew years the custom
of coating the cheese with an impervious
layer has been suggested, with the ob

it is churned at 70 degrees.it will never
have a solid grain, it will be longer in
the churn, but the pleasure of .handling
