Cling Peaches And Cranberries to top off a lavish holiday (east, nothing could be more satisfying than 'Christmas Cranberry-Cling Compote." The red of its whole fresh cranber ries and the gold of its canned cling peach slices are as decor ative as the blend of flavors is delicious. Add to this the slices of lemon, wedges of orange and such exotic spices as coriander, cardamom and ginger and you have a tantalizingly tart dessert to climax a heavy meal. Christmas is not exactly the time of year when cooks pay much attention to the kitchen budget. But Christmas Cranberry-Cling Compote" does point up the economy of cling peach es. It uses both the fruit and syrup in a can to highly flavor ful advantage. Economy begins with clings right on the grocery store shelf. They are among the least expensive of all canned fruits and by long odds the most popular with Ameri cans. . Keating cling peaches is noth ing new but it is a serving method that is becoming a fav orite with more and more home makers. As a colorful and fla vorful accompaniment for a hol iday turkey, heat cling halves in their syrup, adding a little lemon juice and grated lemon rind. At serving time,- fill the hot peaches with cranberry sauce. They complement the bird and vice versa delightfully. Christmas Cranberry-Cling Compote 1 can (1 lb. 13 or) cling peach slices 2 cups whole fresh cran berries 1 whole lemon j medium-size orange 'i cup sugar l teaspoon coriander j teaspoon cardamom ' teaspoon salt teaspoon ginger 1 tablespoon cornstarch 2 tablespoons water Drain peaches well, reserving all syrup. Combine peach syrup with cranberries and heat to boiling. Slice lemon thinly. Cut orange into thin wedges. Add lemon, orange, sugar, coriander, cardamom, salt and ginger to cranberry mixture, Boil 5 min utes. Combine cornstarch and water. Add to cranberry mix ture. Cook, stirring constantly, until mixture thickens. Stir in peach slices. Chill well. If de sired, serve with a topping of sweetened whipped cream or sour cream. Makes 8 to 10 servings.
