Made of an especially light, fresh tasting fruitcake recipe, they are baked in individual paper cups, removed from the cups after baking and wrapped in clear plastic. They can be bung on the Christmas Goodie Tree and distributed to holiday visitors. Or made in advance, they can be mailed to ravenous sons and daughters at college as a pre-Christmas surprise. FRUITCAKK BONBON GOODIE TREE (60 fruitcake bonbons) 'j cup unsulphured molas ses 1 can 6 ounces) frozen or ange juicWconcentrate, thawed, divided 1 package US ounces) seedless raisins 1 jar d pound l mixed can died fruits, divided a cup (1 stick) butter or margarine 2-3 cup sugar 3 eggs Vt cups sifted all-purpose flour ' lcasXon baking soda 3, teaspoon cinnamon "i teaspoon nutmeg t teaspoon allspice ' teaspoon ground cloves ,i cirp chopped nuts Clear plastic wrap 17 yards ribbon, Ik-inch wide Small tree Blend togetlier unsulphured molasses and half of the orange juice concentrate in a sauce pan. Place over low beat, stir ring constantly, until mixture comes to a boil. Add raisins; bring to a boil again. Reduce heat and simmer 5 minutes; re move from beat. Reserve ap proximately a fourth of candied fruit for garnish; stir remaining fruit into molasses mixture and reserve. Cream together butter and sugar. Blend in eggs, one at a time. Sift togchher flour, soda, and spices; add to creamed mixture alternate ly with remaining orange juice concentrate. Add molasses-fruit mixture and chopped nuts; blend. Line 1-inoh cupcake pans with miniature paper cups. Fill V full with fruitcake mixture, and sprinkle with re served candied fruits. Bake in a moderate oven (350-dcgrecs) 25 to 30 minutes. Cool, remove paper cups. Place each bonbon in center o 6-tach square of plastic wrap, pull edges togeth er at top arid lie with 10-inch piece of ribbon, Tie to tree and make bow. Try Oyster Chicken Stew In most American homes, Christmas Eve supper is simple but well-flavored with anticipa tion of the next day. In our mother's home, we often had eitlier a creamy oyster stew or this oyster and chicken stew be fore decorating the tree. There were always children and neigh bors and visiting relatives (wo had scads of them) to enjoy it and no one ever complained of being hungry afterward. This oyster- chicken stew uses frozen chicken breasts. Diced leftover turkey may be used in place of the chicken OYSTER-CHICKEN STEW (6 to 8 servings) 1'4 lbs. chicken breasts or 2 packages (10 oz. each) frozen chicken breasts, thawed 1 pint chicken broth 1 can (6 oz.) chopped broiled mushrooms 1 teaspoon salt ' teaspoon celery salt 2 tablespoons cornstarch 3 tablespoons water 1 pint oysters or 2 packages (8 oz. each) frozen oysters, thawed 1 quart rich milk or half and half Butter or margarine Cut chicken breasts Into bile sized pieces and place in 1 quart saucepan. Add chicken broth, mushrooms, Including broth and seasonings. Bring to a boil and simmer, covered, until chicken is tender, about 10 minutes. Stir In cornstarch and water which have been blended together and cook until liquid thickens. Add oyster liquid and oysters, which havo been carefully picked over to remove any bits of shells. Bring to a boil end simmer 1 minute. Heat milk and stir into chick en . oyster broth. Starting 10 market this month, in time for the holiday season, is a pecan crop that's nearly 60 per cent larger than aver age, the United States Depart ment of Agriculture reports. Chances are, western food shoppers will find tliem attrac tive buys. Here are some ways they can be used to en hacne Yulo specialties: Mashed Swoetpotatoes: Add butter, seasonings, then moisten with orange juice. Just before serving, blend in coarsely chopped pecan nutmeats. Gelatin Salads: Broken pe cans add a delightful texture contrast to cither molded fruit or vegetable salads. Fold in af ter mixture has begun to thick en. Sweet Rolls or Coffee Cakes: Brush dough, rolled about H inch thick, with melted butter, then spread with brown sugar mixed with your favorite spices. Sprinkle with a generous amount of chopped pecans. Roll up as for jelly roll. Cut Jnto slices. or shape into a ring ana make slashes one Inch apart. Lot rise until double and bake. While still warm, drizzle with confectioner's sugar frosting, sprinkle with more chopped nut meats. Cakes: Add about cup of chopped pecans to butter cake batter before turning into pans. Try this trick with gingerbread, too. Pecan Nut Bread: Sift togeth er 2'i cups sifted flour, two tablespoons sugar, three t e a spoons baking powder, ',4 tea spoon salt and k teaspoon cin namon. Combine two well-beaten eggs with one cup milk, then blend into dry ingredients, mix ing just until smooth. Stir in U cup salad oil and one cup coarsely chopped pecans. Turn into a greased loaf pan and let stand 20 minutes. Bake in a moderate oven, 350 degrees F., for one hour. Makes one loaf very good spread with cream cheese. Pecan-Fuit Bars: Sift togeth er one cup sifted flour, V tea spoon baking powder and teaspoon salt. Blend in V cup melted shortening, one cup su gar, two wyll-beaten eggs, one cup chopped pecans and one cup finely-sliced dried fruit (apricots, dates, prunes or figs, or a combination of several). Spread batter evenly In a shal low (I,1x9-inchl pan. lined with waxed paper. Bake in a moder ate oven, 350 degrees F., for 25-30 minutes. When done, let stand for several minutes be fore cutting into Ix3-Inch bars. Turn onto a rack and peel off paper. Let cool slightly, then roll in confectioner's sugar. Other festive Notes: Keep a bowl of pecans handy for nib blcrs; use for the stockings that - hang . by . the - chim ney, holiday table decorations. If you buy pecans in quan tity, store them, unshelled. In a cool place. If, however, you have freezer space and willing workers, shell the nuts and freeze in a tightly sealed con tainer. Plan to use them within a year. Banana-Fig Fruit Soup A marvelous new recipe for soup, which can be served hot or cold and the dollop of sour cream is just right. 1 cup (9 ounce package) California Dried Figs 2 cups water 4 medium bananas, all yellow i cup sugar Vi cup lemon juice 1 teaspoon cinnamon V4 teaspoon cloves Sour cream Combine the California Dried Figs and water in saucepan; cover and simmer 30 minutes. Mash three of the bananas; blend In sugar, lemon Juice and spices. Add to fig mixture and simmer five minutes. Remove from heat; slice in remaining banana. Serve warm or chilled with sour cream.
