Lemon Crisps should be baked just till the edges begin to brown; removed immediately from cookie sheets onto cake racks to cool. Be sure to store thorn in a tightly covered con tainer to keep them crisp. LEMON CRISPS 1 cup beet sugar cup butter or margarine eggs Vi teaspoon soda '-j cup cultured sour cream 1M cups sifted alt-purpose flour Vt teaspoon lemon extract Vi teaspoon grated lemon Thoroughly cream beet sugar and butteror margarine together, Add eggs one at a time, beating well after each addition. Dissolve soda in sour cream. Add flour and sour cream alternately to creamed mixture. Stir in lemon extract and lemon rind. Chill this soft dough several hours. Flour hands and form dough into 1 inch rounds and place on a well-greased cookie sheet about 2 inches apart Dip glass into gran ulated beet sugar and press cook ie round flat. Bake in 375 de gree oven 12 to 15 minutes V'ields about S dozen cookies. SANDWICH HINTS Sandwiches to carry to school' are more interesting with a salad like filling.
