Deer season is upon us and
most hunters who are far afield
will hog dress their deer within
minutes after bagging the ani
mal. A good many may go
through life wondering just what
the live weight of some their
bigger game was.
Well, if you have the dressed
ran hit the nail on
the head by figuring the dressed

The nrioin nf names are al
ways intriguing and when the
man of the house Brings ra a
"canvasback" you'll have some
thing to talk about besides how
many shots it took to bring them
down.
One source says that the name
canvasback can be ascribed to
the grayish-brown back of the
bird which gives it the appearance
of wearing a coat of used can
vas. Another and more interesting
version connects it to the canvas
- bags in which market hunters of
old once shipped their waterfowl
to the lush clubs and hotels of the
large cities. Such hunters once
. sent tons of ducks and geese from
the Klamath country. -
To get these valuable bags re
turned, they were stamped "can
vas back." Since the oanvasback
is one of the largest and most
delicious of all water fowl. It
was in great demand in those
days and so sacks of this species
predominated. Eventually the
. f canvasback" became a name.
' Menus of those halcyon days
frequently suggested roast can
vasbacks with oyster stuffing.
To know why you have only to
try it on the family.
Stuffing sufficient for two birds
is made by mixing two cups of
bread crumbs, two cups cracker
crumbs, 14 teaspoon salt, Vi tea
spoon pepper, teaspoon mace,
two tablespoons minced onion,
four tablespoons finely ohopped
celery, V cup melted butter, one
pint oysters, (tough sections re
moved) and cup oyster liquid.
Mix until all ingredients cling
together, stuff birds, place on
roasting rack and bake 2Vt hours
for well-done, less for red meat
at 350 degrees. Baste often with
melted butter.
Lemon Crisps
These tender, rich, delicately
flavored cookies are a perfect ac
companiment to a dish of fruit
for dessert or to a glass of
milk for an after school snack.
Their melt-in-the-mouth goodness
makes them so popular you will
want to bake them often.
Lemon Crisps should be baked
just till the edges begin to
brown; removed immediately
from cookie sheets onto cake
racks to cool. Be sure to store
thorn in a tightly covered con
tainer to keep them crisp.
LEMON CRISPS
1 cup beet sugar
cup butter or margarine
eggs
Vi teaspoon soda
'-j cup cultured sour cream
1M cups sifted alt-purpose
flour
Vt teaspoon lemon extract
Vi teaspoon grated lemon
Thoroughly cream beet sugar
and butteror margarine together,
Add eggs one at a time, beating
well after each addition. Dissolve
soda in sour cream. Add flour
and sour cream alternately to
creamed mixture. Stir in lemon
extract and lemon rind. Chill this
soft dough several hours. Flour
hands and form dough into 1
inch rounds and place on a
well-greased cookie sheet about 2
inches apart Dip glass into gran
ulated beet sugar and press cook
ie round flat. Bake in 375 de
gree oven 12 to 15 minutes
