OREGON PAGE ftC CAULIFLOWER SOUP If a new blender is your pride and joy, and you're wondering how lo make more use of it, Iry homemade cream soups. With a blender, they're a whu to make, and the texture is smooth and creamy every time. This new "Cauliflower Soup" is especially nood. When you dip your spoon n. lo this, you'll wonder why cauli llower isn't more often made into soup. It has a delicious, mild fla vor, pointed up with a little Cali lornia white dinner wine. For an elegant supper, serve bis bowls of this superb "Cauliflower Soup" ripine hot. with crisp buttery bread sticks and glasses of lightly chilled white wine, for a most agreeable temperature contrast. Make the bread sticks yourself, with a package of refrigerated bis cuits, rolled out long, and dipped .n melted butter helore bakin; f or dessert, provide crisp, red .skinned apples, and wedges of jour favorite cheese. CAULIFLOWER SIX P 1 medium head cauliflower 1 tablespoon instant minced onion or, ' cup finely chopped raw onion "j teaspoon salt Roiling water l4 cup butter or margarine l4 cup sifted all-purpose flour 1 cup light cream or rich milk Cauliflower puree Salt i cup grated American cheese 't cup California Sauterne or other white dinner wine Wash cajliflower, trim off ieaves and break into small pieces. Dace in pan with onion, salt and boiling water to just cover. Cook until vegetable is tender. Drain, saving cooking liquid. Blend or puree cauliflower with l'j cups cooking liquid. Melt butter, blend m flour. Slowly stir in milk. Cook and stir until mixture thickens and is smooth. Add cauliflower pure and salt to taste. When piping hot, add cheese and wine, stirring until cheese is melted. Serve at once. Makes about t quart. Note: This is a fairly thick soup. Add additional milk it a thinner ;OUp is preferred. FANCY EGGS A holiday brunch might he scrambled eggs topped with avo cado halls along with gripped Canadian bacon. Serve with hot bread.
