His canvas is cake, his brush a pastry tube, and his paints are icings, jellies and food color ing. His subjects ha"e ranged from Queen Elizabeth to baseball stars Sal Maglie and Bobby Thomson and entertainers Arthur Godfrey, Art Linkiettw and Patti Page. The portrait cakes Gertz creates at his family's Oven Bake Shop in Port Richmond, Staten Island, are intended to be eaten. "But most of our customers say they just can't bring themselves to cut into them and spoil the pic tures," he said in an interview. This leads to a lot of expen sively stale baked goods, for the made-to-order portrait cakes cost $100 and up. However, standard subjects, such as George Wash ington, Abraham Lincoln, Alice in Wonderland, and Peter Rabbit, come cheaper, usually only one dollar above the price of the cake itself. - Gertz, now 30, did his first por trait cake 12 years ago as a sur prise for his wife's uncle, sing er Phil Regan. He also made some for window displays for the bakery. Word of his talent spread, and orders began to come into the shop run by his father, Carl. Among the commissions was (he Queen Elizabeth portrait cake, or dered in 1953 by the then British consul general in New York, Sir Henry Hobson, for a coronation luncheon for the Daughters of the Brhish Empire. Like other made-to-order portrait cakes, it was copied from a photograph in this case, a prize-winning United Press picture of the queen that had been a cover picture on a national mag azine (Look). The work is time-consuming, the young baker said. One picture may take a day or more to com plete on a 20-inch square cake, the standard size for the special or ders. Gertz works from a paper and pencil sketch, which may take three hours to draw. Then icings must be mixed with food colorings. A pastry tube serves for line drawing, and a spatula is used to spread the spe cial jellies needed in cake deco ration. The effect is three-dimensional and the likenesses are remarkably good. Gertz said he can't afford many mistakes in his cake portraits. Un like a conventional artist wno works with- canvas and oils, he can't point out an error and work over it. He has to scrap tne cake and start with a new palette of icings and a new cake canvas. Is this cake portraiture the mark of a frustrated artist? "I did want to be an artist," he admitted, "but I've never been sorry J went into the family oak ery business. If my pictures weren't on cake, they would be just like thousands of others. As it is. they're unicv Between the special orders, Gertz and his younger brother, Carl Jr., 19. work on more mun dane cake-trimming jobs. They de sign and make many holiday and children's novelties, including a Chishoim trail scene with icing Indians biting the dust as cow boys rush past on horseback, and a space travel cake complete with rocket ship and crew. The younger Gertz said he has no ambitidns to follow in his broth, er's footsteps as a portrait art ist. But he plans to decorate the cake for his own wedding In Sep tember. With his brother's help, he hopes to revive an old-world art by making a decorative sugar icing that looks like Venetian glass and is as fragile a crystal.
