And. of course, choose an oven proof casserole, the prettiest one you can find. , CASSEROLE FRUIT CAKE . 1 cup dried apricots 1 cup light or dark raisins 1-3 cup slivered candled cher ries 1-3 cup diced candled orange peel 1-3 cup diced citron 1-3 silvered blanched almonds I 1 teaspoon grated lemon rind ; Cover apricots with cold waler; bring to boil; boll 1 minute; drain. Slice apricots coarsely. Add rest of fruit, almonds, and rind. TIIK hatti:r 1 cups sifted enriched flour ii teaspoon baking soda 1 teaspoon salt eggs, separated 4 cup Crisco 1 cup sugar Start heating oven to 275 decrees T. Orease 2-quart casserole. Com bine flour, salt and soda. Beat egg Whites until stiff. Beat Crisco, su gar and egg yolks until light and fluffy. Stir in fruit mixture, blend ing well. Add flour mixture alter nately wllh beaten egg whites. Turn into casserole. Bnke 2 hours or longer, depending on thickness of loaf.
