Serve with relishes or a salad and Melba toast or triangles of cheese toast for a hearty lunch or light supper. SCRAPE OFF DIRT You can tell a good gardener by the way he keeps his lools. When the gardening is done, it pays to scrape the dirt from the metal parts-of all tools. Then wash them in hot soap or detergent suds, rinse and dry carefully be fore putting away for the winter. A light coating of lubricating oil will prevent rusting during the winter months. OXTAIL. SOl'P Wash and dry pounds ox tails; dredge with flour and brown in a little hot fat in a deep, heavy utensil. Add 1 teaspoon salt, V, teaspoon pepper, 1 bay leaf, par sley and 2 quarts water. Boil 10 minutes; skim. Cover and simmer over, low heat about 3 hours or un til meat is very tender. Remove joints; pick meat from benes and return meat to soup stock. Add 1-3 cup each diced celery, carrots and onion Simmer 30 minutes. Add 1 teaspoon Worcestershire sauce and correct seasonings. Milk combines with most foods to blend flavors and serveR as the basis for innumerable tasty Bauces and soups. SEAFOOD CHOWDER 4 tablespoons butter 4 tablespoons minced onion Liquid from two 1-oz. ' cans of shrimp, crabmeat or lobster 2 cups finely diced potatoes , 2 cup boiling water 2 cups milk - -1 teaspoon salt (taste tor j amount of salt because the liquid from canned fish is . usually very salty) ,- it teaspoon pepper ' Melt butter In heavy kettle; add,' onions and cook over low heat until yellow. Add liquid from sea food, potatoes and boiling water. Cook until potatoes are tender ubout 10 minutes. Just beiore serv ing add seafood and remaining in gredients. Heat to boiling and serve at once.
