KLAMATH FALLS, OREGON THURSDAY, OCTOBER 6, 19ss Tapioca Pudding There Is nostalgic charm to tapioca pudding reminiscent of bearty country meals wi.ii pitchers of milk and cream on the table to pour generously over each serv ing. Tills Mora Tapioca Parfalt Is made In the modern manner with the convenience type of tapioca pudding mix, shortening the time of preparation considerably. Tapioca pucding mix comes also In vanilla and orange coconut fla vors. MOCHA TAPIOCA PARFAIT , l package chocolate tapioca pudding mix 2 lenspooi.s Instant coffee I 1 tablespoon sugar a cups milk 5 1 teaspoon butter Cream Combine pudding mix, Instant coffee, and sugar in saucepan. Add mil and mix well. Cook and stir over medium heat until mixturo comes to a full boll and is slightly thickened. (Mix'ure will continue to thicken as it cools.) Remove from heat and add butter. Let stand 16 to 20 minutes; stir once or twice Just to mix. Spoon into sherbet glasses. Chill. Serve with cream. If desired. Makes 4 serv ings. If desired, 'i cup strong coffee may be substituted for the instant coffee. Reduce milk to cups und omit butter. BANANA TAPIOCA PUDDING 1 package vanilla or orange coconut tapioca puaaing mix 3 cups milk 1 or 2 bananas Combine pudding mix and milk In saucepan. Cook and stir over medium heat until mixture comes to a full boil and Is slightly thick ened. (Mixture will continue to thicken as It cools.) Remove from heat. Let stand 15 to 20 minutes; Mir once or twice lust to mix Chill. Before serving, dice bananas and fold Into pudding. Bpoon into sherbet glasses or serving bowl. 4erve plain or with whipped cream. Remember that much ofi the minerals and vitamins are in the skin, so wash each potato carefully, prick the skin at the top of the baker and pop Into a 400-450 degree oven and bake un til done. It takes at least an hour for a medium size baker at this altitude. Serve with your favorite topping. Most persons prefer butter, but the dieter can have baked potatoes topped with low-fat cottage cheese. Add a sprinkling of crumbled crisp bacon and chopped chlvea to dress It up.
