Ihey may be served as the main dish If substantially fortified with a hearty protein food such as meat, cneese, eggs or lish. Then sunpiy add hot soup, rolls er crusty French bread and a favor ite fruit dessert. Dairy foods such as cheese, cot tage cheese, milk and whipping cream help make summer salads tasty and appetite satisfying. Re member dairy foods when you are preparing meals In any season they are ready to use, economical to serve and good to eat! Try these delicious summer salds and see! LIME SEAFOOD SALAD (Serves S) 2 packages lime-flavored gela- 3 cups hot water 1'3 lbs. drained cottage cheese i 1 Tbsp. chopped onion 1 Tbsp. vinegar, or lemon juice 5, cup horse-radish 2 Tbsp. mayonnaise Watercress or greens 1 to 2 cups cooked shrimp Dissolve gelatine In hot water. ChUl until partially set. Beat until light. Stir in remaining ingredients, except watercress and shrimp. Four into a 9-inch ring mold which has been rinsed in cold water. Chill until set. Unmold. Fill center with watercress and shrimp, cooked and chilled. .. Serve with mayonnaise. FROZEN CHICKEN SALAD (Serves 4) i cup cold diced chicken ! cup diced pineapple 3 Tbsp. chopped nuts 1-3 cup heavy cream, whipped 1-3 eup mayonnaise Mix chicken, pineapple and nuts. Add whipped cream. Mix In mayonnaise. Freeze for 3 hours. Serve on lettuce and garnish with mayonnaise. CALIFORNIA SALAD BOWL (Serves ) 2 cups '.-inch bread cubes ' , cup salad oil 2 cloves garlic 2 heads green lettuce 4 tsp. dry mustard ', tsp. black pepper 2 t-'.P- salt 1 cup crumbled blue cheese' 1-3 cup lemon juice 1-3 cup salad oil J"ggs Fry bicadcubes in the V cup salad oil which has had the garlic crushed in it. When cubes are golden brown, remove from pan and cool. Break lettuce Into small pieces in salad bowl. Sprinkle with mustard, salt, pepper and cheese. Combine lemon Juice with 13 cup salad oil and pour over greens. Break eggs which have been sim mered gently for only 1 minute, over greens. Toss gently to mix cubes and toss lightly again. Fresh fruit is wonderful (or out-of-hand eating, between meal snnrks, sim ple but smart dewerls or adding to fresh fruit salads. Golden aprictos can be made into many delicious desserts. Fresh apricot pie will find place in everyone's list of favorite dessert time treat. Summertime means warm weather and then is the time Ice cream and sherbet are always welcome. Fresh apricot ire cream and fresh apricot sherbet are both praise-worthy summer treats. Sunny apricots can be made into tempting fresh apricot upside down cakes. A cake mix can be used for the cake which means delicious dessert in a Jiffy. Short cake is a summer choice and here again apricots find their place. For a dessert that will please for party or family meal try serv ing apricot fluff pie. Here is a light fluffy pie which Is garnished with fresh apricot halves and whipped cream. It is a treat that can be served with confidence. APRICOT FLUFF PIE 1 tablespoon gelatin 4 cup cold water 2 cups coarsely cut apricots 6 apricot halves ' j cup water 2 cups separated 1 cup sugar ... teaspoon salt 1 tablespoon lemon juice 3 tablespoons sugar lt cup whipping cream . 1 baked 9-inch pie shell. Line a pie plate with pastry. Ar ranae fresh ripe apricots in pastry shell. Combine flour and sugac Sprinkle over fruit. Sprinkle with lemon Juice. Dot with butter.
