Foods are divided Into three classes: No. 1 These foods, which act as antiseptics, eliminators, laxa tives and pariflere, ara such at raw fruita and cooked non starchy vegetables. No. I These are tha foods which build or rebuild the body and are known aa building foods suck as lean mean, fish and legumes. (Legnmes are dried beans, dried peas, lentils and peanuts). No, I These are the foods which supply warmth and energy such as starch, sugar and fat. Classification No. 1 Raw fruits, non-starchy vegetables contain vital food salts. These sslts enter the chemical pro cesses of tha body, transforming the foods to heat and energy. Oftlmes fruits and vegetables ara looked upon as aids dishes when as a matter of fact they contain all the elements neces ssry tor nutrition. Alwsys sat either raw fruits or raw vege tables with a meal to keep stable foods from fermenting causing toxic poisons. Classification No. S Foods belonging to this class, chiefly lean meats, fish, foul, game and legumes, build. Chicken and game are easy of digestion. Lamb and mutton ara the most whole some. Mutton Is mors digestible thsn beet because Its fibres ara much finer. Veal is considered difficult ot digestion becsute It does not stimulate the flow of digestive juices. Cheese is a meat substitute for those who digest It well. Do not combine with starch. Cottsse cheese is the best of the building foods. Eggs persons ot slow digestion and alucgish llrsr should not eat eggs. Eggs should be combined with frails and vegetables not starches. Coddling of eggs la best. Tha peanut Is not a nut but a legume and belongs to the dried bean-lentil family. It Is a concentrated food and ahonld be ased sparingly. Two ounces Is a liberal serving for main part ot meal. Classification No. S Energy, heat. We need starch in modera tionproperly prepared and properly cooked. Starch poison ing (or acidosis) is America's most prevalent dlsesaa because of overeating of starch and sugar. Grain alcohol la made by a pro cess of fermentation not unlike the process within the digestive tract. This explains why wa have the habit we can't give up.
