the local power company ahow :
that over 25 per cent of the i

This means that more than !
one out of every four families
in 'Copcoland" uses an electric
range, a remarkable showing and
one which compares favorably
with any section In the United
States.
At the and of 1910 there were

It would fce such a sim
ple matter for Schilling
.to produce both good
coffee and cheap coffee.
Everyone else does it.
So did Schilling sit one
time. But Schilling
learned that cheapness is
contagious. There are
many good coffees all
made in company with
bad coffees. But Schil
ling good coffee has no
companions. The finest
things usually come
from those who make
good things only. Some

FOOD CHATS
KTHKL M. HALL
111 foods ara good. In this
column Bstnrdsy we talked of
food combinations. To select
our foods we need a schedule or
a division of foods from which
to select our own needs, As I
ssld before, all foods ara good-
wrong combinations are tha chief
causa of dietetic errors.
To begin with, know the class!
ftcstlona of foods and know the
foods belonging to each class!-
fkstlnn then your combination!
will take care of tha rest. This
Is not corapllrsted or hsrd to
understsad It mesns a rrult
breakfast, a Starch luncheon and
a Meat dinner.
Foods are divided Into three
classes:
No. 1 These foods, which act
as antiseptics, eliminators, laxa
tives and pariflere, ara such at
raw fruita and cooked non
starchy vegetables.
No. I These are tha foods
which build or rebuild the body
and are known aa building foods
suck as lean mean, fish and
legumes. (Legnmes are dried
beans, dried peas, lentils and
peanuts).
No, I These are the foods
which supply warmth and energy
such as starch, sugar and fat.
Classification No. 1 Raw
fruits, non-starchy vegetables
contain vital food salts. These
sslts enter the chemical pro
cesses of tha body, transforming
the foods to heat and energy.
Oftlmes fruits and vegetables
ara looked upon as aids dishes
when as a matter of fact they
contain all the elements neces
ssry tor nutrition. Alwsys sat
either raw fruits or raw vege
tables with a meal to keep stable
foods from fermenting causing
toxic poisons.
Classification No. S Foods
belonging to this class, chiefly
lean meats, fish, foul, game and
legumes, build. Chicken and
game are easy of digestion. Lamb
and mutton ara the most whole
some. Mutton Is mors digestible
thsn beet because Its fibres ara
much finer. Veal is considered
difficult ot digestion becsute It
does not stimulate the flow of
digestive juices. Cheese is a
meat substitute for those who
digest It well. Do not combine
with starch. Cottsse cheese is
the best of the building foods.
Eggs persons ot slow digestion
and alucgish llrsr should not eat
eggs. Eggs should be combined
with frails and vegetables not
starches. Coddling of eggs la
best. Tha peanut Is not a nut
but a legume and belongs to the
dried bean-lentil family. It Is
a concentrated food and ahonld
be ased sparingly. Two ounces
Is a liberal serving for main part
ot meal.
Classification No. S Energy,
heat. We need starch in modera
tionproperly prepared and
properly cooked. Starch poison
ing (or acidosis) is America's
most prevalent dlsesaa because of
overeating of starch and sugar.
Grain alcohol la made by a pro
cess of fermentation not unlike
the process within the digestive
tract. This explains why wa have
the habit we can't give up.
Starch and sugar together Is a
bad combination. In baking use
honey, mapla sugsr and dark
brown sngar. Starch and sugary

IN THE
MODEHN
COME things go together" and1 some do not. TKe
drest 70a .wear for shopping is not the dress
that you wear for a formal dinner. The fun that
are so appropriate in December would be sadly out
f place at a June garden party.
The same thing is true of salads and salad
dressings. So many different foods come to our
tables as salads, no one dressing can do for all of
them. There is a different kind of salad for each
. occasion and an appropriate dressing for each dif
ferent salad.
Miss Mary B. Murray has written a little book
on appropriate salad service which contains the
answers to many of your questions as to the proper
selection and service of salads.
In her book. Mia Murray lays stress on one
thing. It is this: Don't smother the flavors of all
your different salads under a blanket of thick
dressing like mayonnaise. For while mayonnaise is
appropriate for some salads, it is not at all appro
priate for others. Mix. a dressing appropriate to
the salad.
We will be glad to send you Miss Murray'
book with our compliments. It is a book you will
want to keep in & handy place where you can al
ways find it whenever a question of alad selection
or service arises. Send your name and address to
