Feeding the Family By ZOLA Food Lut Minuio Suggntiom For Holiday Delights Among the delights of holi day baking lett to the last is the making of crisp, fresh, butter-rich cookies. We offer today two easy-to-do. certain to-be-praiscd types of cookies redolent with the fragrance and flavor of cardamom, a spice that has been prized by generations of Scandinavians. Check spice shelf for ground cardamom and for sesame seed. Gracious and gay is the day tray that offers holiday pastries and plenty of freshly made coffee. Christmas Crescents Cardamom and toasted se same seed make of these crescents an offering for giv ing great pleasure. You 11 be rewarded with four dozen richly spiced cookies. Sift together 2'2 cups sifted all-purpose flour, one tea spoon double-acting baking powder, one - half teaspoon ground cardamom and one fourth teaspoon salt. Gradu ally stir one cup sugar into two-thirds cup butter. Beat in one lightly beaten egg. Add flour mixture gradually, mix ing after each addition. Let dough stand three min utes at room temperature. With fingers, on waxed paper, all ape a rounded teaspoon of dough at a time into a roll two inches long. Taper ends. Roll in lightly toasted sesame seed. Place on an ungreascd cooky sheet. Curve ends to form crescents. Bake in a preheated moderate oven, 375 degrees, 18 to 20 minutes or until lightly browned around the bottom. Cool on wire rack. Store in tightly closed cooky jar or box. To Toast Sesame Seed. Spread a thin layer of sesame seed in a large shallow baking pan. Toast in a preheated moderate oven, 350 degrees, 20 to 22 minutes or until lightly browned. Fancy Cookies This quickest and easiest of all Christmas cooky recipes is the base for letting your imagination and artistic abili ties run riot as you decorate cookies cut into any desired shapes. We- hope that our cooky picture will provide decorating ideas galore for holiday bells, trees, boots, wreaths and other appropriate motifs. 13''2-ounce package all purpose cooky mix 1 teaspoon ground cardamom Blend cooky mix with car damom in a mixing bowl. Mix, shape and bake accord ing to package directions for drop or rolled cookies. Deco rate as desired with colored sugar, confectioners' sugar and water frosting and or glace fruit. Store in a tightly closed box or jar if made ahead of time. Three dozen rookies. Good Coffee Is Reason for Rejoicing Coffee and hospitality are often one and the same thing. Coffee that is rich, strong and clear can lift spirits; be a boon to hostess and guests. Spiced Coffee. Use three two-inch sticks of cinnamon bark and six whole cloves for one quart of coffee. Put these in bowl of vacuum coffee maker, in the cold water of the percolator or in the pot of a drip coffee maker. Brew coffee double strength which means four tablespoons cof fee to each cup (eight ounces) of water. Serve in demitasse cups lopped with whipped crram. Garnish with nutmeg or top with whipped cream and chocolate shavings. Beat one egg white until frothy. Gradually beat in one fourth cup sugar, a table spoon at a time; beat until Stiff. Fold into two cups dairy eggnog which is readily available from regular milk man or in dairy department at super market. Fold in one cup whipping cream, whip ped. Pour into refrigerator tray. Put in freezing compart ment of refrigerator. Stir frequently until mixture holds its shape; then sprinkle lightly with nutmeg and freeze until firm, Hard Sauce Variations The pleasure of holiday puddings is enhanced with hard sauce. Here are varia tions on a basic recipe for three-fourth cup sauce or enough for six portions. Basic Hard Sauce. Cream one-third cup butter until soft; gradually beat in one cup confectioners' sugar, then one tablespoon cream and one - half teaspoon vanilla, lemon or almond extract, cin namon or nutmeg. (Brandy, Rum, Sherry or Port may be substituted for cream and flavoring). Pile lightly in serving dish and chill until cold but not hard. Butter scotch. Substitute one-half cup firmly packed brown sugar for confection ers' sugar: increase cream to three tablespoons and vanilla to one teaspoon. Beat in one egg yolk if a golden sauce is desired. Ginger. Omit cream and va nilla and beat in two table spoons ginger syrup and one fourth cup preserved ginger. Brown Rice Nice For a festive holiday dish that is different, simply cook brown rice in consumme; then toss lightly with buttered, diced, roasted almonds, some finely chopped parsley and pimiento. Walnut Ways Use walnuts whenever a recipe calls for "nuts." Un less recipe says otherwise, walnuts are usually added at the end of the recipe. Appetisers. Add to dunks and dips. Marinate halves in tart French dressing for quick nibbles. Try these in tossed green salads, too. Soups. Toasted walnut ker nels are terrific on soups. Salads. Add to mixed vege table, fish and fruit salads. Stir into macaroni or potato salad just before serving. Use toasted walnuts in gela tin salads. Main dishes. Add to fowl or vegetable stuffings. Use as topping for casserole dishes. Stir into hamburgers or meat loaf. Mix with sweet pota toes. Breads. Muffins. Add new texture to all hot breads. sweet rolls, coffee rings. Mix with sandwich fillings. Desserts. Stir into packaged puddings. Use as ice cream topping. Add to fruit pies. Mix with a little brown sugar and sprinkle, finely chopped, over pumpkin pie 10 minutes before removing from oven. Complexity of Machines Causes Training Concern New York-ilOT-The increas ing complexity of today's ma chines and of the skills need ed to plan, build and operate them is causing concern at more than one educational level. In a high area, the Science Advisory Committee named last February by President Kennedy released a report recently saying the nation faced a serious shortage of scientists and engineers. Il urged an effort be made to expand the opportunities for graduate education in the physical sciences, engineering and mathematics. The committee was headed by Dr. Jerome B. Wiesner, Special Assistant to the Presi dent for Science and Technol ogy. Its repart, written by a panel of scientific and techni cal manpower, said the short ages in educated manpower threatens the nation's abili ties to carry out its "vital" commitment?. Other Shortages At Rnother level of educa tion, shortages also exist, ac cording to some conclusions reached at a panel meeting held here recently by the Cleveland (Ohio) Institute of Electronics. Officials in train ing and employee relations departments of several indus tries participated. The institute said that late last summer it conducted hundreds of inquiries, by per sonal interviews and by mail, and found there is a "very real shortage of trained tech nicians and in many cases a dearth of facilities for train ing." Qualifications Lacking It said that 55 per cent of a cross section of more than 100 leading companies, most of them users rather than makers of electronic equip ment, said they had been try ing to hire technicians, and 6(1 per cent said they were having trouble getting those with proper qualifications. They found a lack of training or training facilities much to blame. In the course of the panel meeting George M a e d e 1, president of RCA Institute, described what he called a simple solution to the prob lem: "Let the engineering graduates, both young and old, devote their thoughts to the problems at hand, and let the technical institute or com munity college graduate do the manupulative work.'1 COMPARE!
