Feeding the Family By ZOIA VINCENT Food Editor Valentin Day Throwi Spotlight on Candy The west coast does its share again this year to pro vide many of the major in gredients used in the esti mated $200 million worth of "store bought" sweet senti ments that will be enjoyed by the nation in February, month with St. Valentine s Day in the middle. West coast states produce a larger number of different agricultural products used in the manufacture of candy than any other area in the Union, says the National Con fectioners association. Among these tasty ingre dients for the chocolates and other confections that will appear in everything from the popular bars to huge heart-shaped and be-ribboned red boxes, will be over 70 million pounds of coast-grown almonds, 14 million pounds of walnuts and millions of pounds of sugar made from western sugar beets. North west filberts are increasingly popular as candy Ingredient. Added to these are such popular ingredients as raisins and dates, citrus fruits, milk, butter and eggs which also give confections ; delightful taste and nutritive values. Candy Bars Tops The principal demand for candy is for bars and similar small items retailing from 1 to 10 cents. Packaged goods retailing for less than $1 per pound and bulk candy ac count for 46 per cent of con fectioner sales. Finely pack aged lines retailing for $1 or more per pound account for only 5 per cent. Favorite types of bars are chocolate-covered (4 million pounds versus all other bars (476,000 pounds). We , eat a record amount, too, 18.3 pounds per capita. " Valentin Variety This month, the nation's candy lovers will consume - their share of the annual two billion, 8400 million pounds : of confections in the form not '. only of chocolates from the ' gorgeous heart-shaped boxes, - but also in heart-felt senti ments expressed in pastel colored candy lozenges, in red , and white gumdrops and oth- r gay favorites of one of America's best loved gift days. Place a layer of the cooked broccoli in a shallow buttered casserole. Cover with a layer of tuna. Dilute soup with milk and pour over tuna and broccoli. Sprinkle with the grated cheese and bake at 350 degrees until mixture bubbles and is lightly brown ed. No-Bake Mocha Cheese Cake Is Extra Special i This brand new recipe for cheese cake that gets chilled instead of baked is extra spec ial for several reasons. Fes tive and light as can be, it's made with . whipped crystals of instant nonfat dry milk in combination with cream-style cottage cheese. A chocolate pudding mix combines with coffee to give enticing mocha flavor. Unflavored gelatine molds it beautifully. And it makes eight generous servings. For garnish as pictured simply shave bar chocolate with vegetable peeler. 1 package (4 ounces) choc olate pudding mix 2 tablespoons (2 envelopes) unflavored gelatine 2 cups strong coffee 5-2 cup sugar 2 egg yolks, slightly beaten 1 cup cream -style cottage cheese Vi cup instant nonfat dry milk crystals Vi cup ice water 2 tablespoons lemon juice Vi cup sugar 2 egg whites, stiffly beaten Chocolate curls Combine pudding mix, gel atine, coffee, one-half cup su gar and egg yolks in sauce pan. Cook over low heat, stir ring constantly, until thicken ed. Cool thoroughly. Beat cottage cheese until creamy. Add pudding mixture and continue beating until mix ture is blended. Combine instant crystals and ice water and whip until soft peaks form (three to four minutes). Add lemon juice and continue whipping, while gradually adding one-half cup sugar, until stiff peaks form (three - four minutes longer.) Fold whipped instant crystals and egg whites into pudding mixture. Pour into pan over crumb mixture. Chill until set (about three hours). Un mold. Garnish with chocolate curls as suggested above. Crumb Mixture. Blend one- half cup fine graham cracker crumbs with one tablespoon sugar and one tablespoon melted butter. Line bottom of 9 x 5 x 3 inch loaf pan with waxed paper or alumi num foil. Press crumbs over bottom of pan. Valentine Parly Ideas for All the Family lo Enjoy Week end entertaining will center on hearts and flowers and red and white color schemes. Give the family a festive time with menu and surroundings a little more in teresting and colorful than usual. The children will love it. And Papa will enjoy a little loving pampering, too. A centerpiece of paper dolls" will make a gay con versation piece. Paper nap kins and place mats, doilies or tablecloth will gaily dis pose of the laundry problem and create atmosphere very inexpensively. -Place cards and miniature bags of Valentine candies tied with red ribbons can serve as favors and also as mints for munching with the coffee (and milk) service. -Or sprinkle bright red hearts, cupids andor arrows cut from red paper over a snowy cloth of paper, cotton or linen. Maybe use large hearts as place mats and cupids or arrows as place cards using white ink. Paper lace doilies make ideal frills Launch Program To Aid Sufferers Of Allergies Pasadena, Calif. (Science Service) A national-wide ef fort is under way to help the 17,000,000 Americans who suffer from allergies. Its aim is isolation and standardization of the precise substances - called allergens that cause allergic symptoms sucl as sneezing, asthma and rashes. A committee of the U.S. Public Health Service's Na tional Institutes of Health, consisting of allergies and immunochemists from a num ber of medical institutions, will direct the program. . Its chairman is Dr. Dan H. Camp bell of the California Institute of Technology here. . y To Study Ragweed Because it is the number one offender allergically, rag weed will be studied first. Several pounds of pollen from dwarf ragweed plants will be dried at room temperature in a vacuum, which should al low it to retain its allergen potency for many years. The products of the pollen will be broken apart and test ed on hundreds of persons. Dr. Campbell is convinced that a certain fraction of rag weed is by far the chief cul prit in the plant. After the committee has succeeded in standardizing ragweed, it will start on g-asses, including Bermuda grass. Another early target of the committee will be ordin ary house dust, which con tains a certain polysaccharide believed to be the chief of fender from this source of hay fever. Full Cooperation The program has been plan ned for a year and the com mittee believes it has the full cooperation of clinical aller gists and researchers through out the country. Success of the project is expected to re quire years of concentrated effort. "As a result of this com prehensive attack on the com plex problems of allergic dis ease," Dr. Champbell said, it may be possible to reduce the prevalence of aero-aller- gents and others through suit able control measures, to pro vide better diagnostic tech niques, purer immunization extracts, and to improve and shorten treatment." i 3 1 JEe M gjs Schools Urged To Study Languages Middlebury, Vt.-fUPD - The nation's larger universities should create centers for in tensive study of at least a dozen of the more widely- spoken languages of Africa, says Dr. Stephen A. Freeman, vice president of Middlebury College. He said that until recently, knowing the languages of the European powers with Afric an empires was enough for our political and economic contacts there. But, he added: "All this is changing. Colonialism is dead. Young Africa is in a hurry, is gaining independence and self-government." Dr. Freeman said the situa tion is far from simple be cause there are more than 700 languages in Africa, with no one of them common enough to be understood generally. for bouquets of all kinds and sizes.
