October is the month when this abundant, economical product is given the spotlight. Rice is reliably reported to be th world's greatest crop. It is tha staple food of the greatest number of people with over half th world's population eating rice three times a day as the main item of diet. This year's crop grown in the United States is estimated at 40.48,000 100 pound bags of which 9.339. 000 100-pound bags come from Cali fornia. Now for some tasty ways to use your share of this inexpen sive, nutritious, low caloried staple food. How to Cook Rice This is the way to cook rice that is recommended by the Rice Industry. You can adjust the a nount of water and cooking time so you get just the texture pnd tenderness you like. Some like it down right mushy, we prefer ours still firm with each grain separate. Plan on cooking enough for a meal with some left over for a Rice Bavarian Cream or some such next day. Enough for three cups cooked rice. Use exact measurements and time cooking accurately if you want firm textured yet ten der rice. Place one cup uncooked rice, tvo cups cold water and 1 teaspoon salt into two-quart saucepan. Bring to vigorous boil Turn heat low as possible. Cover saucepan; do not remove lid nor stir rice while it is cooking. Steam 14 minutes. Remove im mediately from the heat. Shrimp Rarebit on Rice Combines Shrimp and Cheese This recipe is simplicity itself, yet can be' served so elegantly that it becomes party fare. It combines shrimp with two Octo ber plentifuls, cheese and rice. For variety in serving, you might like to pour rarebit into the center of a rice ring or sur round the serving dish with in dividual rice molds. Rice may be garnished with finely chop ped chives, pimientos andor sliced stuffed green olives. 1 pound uncooked shrimp, fresh or frozen 2 tablespoons butter 2 tablespoons flour 1 cup milk 2 cups grated sharp processed cheese t. teaspoon dry mustard 3 cups hot cooked rice Shell, devein and wash shimp. Cook in boiling water three min utes or until color deepens. Drain. Melt butter, remove from heat and stir in flour. Return to heat and gradually stir in milk. Cook and stir over medium heat until thickened and boiling. Add cheese and mustard. Cook over very low heat, stirring constant ly, until cheese melts and mix ture is smooth. Add shrimp and heat one minute more. Serve over hot cooked rice. Rice-Apricoi Stuffed Pork Chops The rice-apricot dressing has a opiquancy that enhances the flavor of the pork chops. For six servings: Brown six one-inch thick pork chops in one table spoon heated shortening. Drain off excess fat, reserving one tablespoon. Cook one-third cup minced onions in the one table spoon drippings until soft but not browned. Remove from heat and combine with three-fourths cup uncooked rice, three-fourths tup chopped dried apricots, one tablespoon minced parsley, two tablespoons sugar, one teaspoon , grated lemon rind, one-half tea spoon salt, one-third teaspoon pepper and two cups water. Pour mixture into two-quart casserole. Arrange pork chops on top. Cover and bake in mod erate oven, 350 degrees, about 45 minutes, or until rice and chops are tender. Rice Bavarian Cream Rich and Party Minded Planning a party? Want your dessert prepared ahead of time? This fruit filled or covered, as you desire, fluffy, rich rice Ba varian cream will delight you. Wakes 8 to 10 servings. 3 i cup beet or cane sugar 2 eggs, separated 3 4 teaspoon salt 1 cup milk, heated 1 envelope (1 tablespoon) plain unflavored gelatin 'i cup cold water 1 2 teaspoon vanilla extract ' teaspoon lemon extract 1 cup cold cooked white rice 1 cup whipping cream In top section of double boiler, combine one-half cup sugar, egg yolks, salt and milk. Place over hot water; cook for 15 minutes, Stirring often, until custard coats the spoon. Custard will be thin. Remove from heat; stir in gela tine which has been softened in the cold water. Add flavorings,. Chill. Beat egg white; gradually adding remaining U cup sugar; continue beating until stiff. Fold into chilled custard. Gently fold in rice and stiffly whipped cream. Spoon into l'i-quart ring mold, rinsed in cold water. Chill well in refrigerator, overnight if possible. Unmold on serving plate. Fill center with sweetened berries or peach slices. Salad Garnishes Often one wants to gild the lily, add a special colorful or flavorful touch to a salad. We've saved up these ideas to pass along to you. t Vegetable Salads. Garnish with aspic cubes, pickled beet slices, capers, carrot sticks, cel ery stuffed with cheese, celery curls, celery hearts, sliced or slivered cheese, chives, cucum ber slices or sticks, onion rings, olives, parsley, pepper rings either green or red or both, pickles, pimiento, radishes, scal lions, sieved egg yolk, sliced egg. Fruit Salads: Consider these garnishes: Berries, sliced or grated cheese, cream cheese, cot tage cheese balls rolled in nuts, date stuffed with peanut butter, gelatin dessert cubes, melon balls, cubes or slices, fresh mint, orange sections, pineapple fin gers, prunes stuffed with peanut butter or cheese, salted almonds or nuts of any kind, spiced peaches, spiced pears, pickled materrnelon rind, fruit sherbet. Rabbit Fricassee Portuguese Style With so much emphasis on poultry these days, we're likely to overlook tender well-meated domestic rabbit. Actually there is no valid reason for putting them in the same category, but, the fact is, people do. Try this well seasoned rabbit fricassee and your family will probably remind you to serve rabbit often. Recipe makes 6 servings. 1 domestic rabbit (about 3 pounds) IV2 teaspoons monosodium glutamate IV2 teaspoons salt teaspoon pepper Va teaspoon saffron Vt teaspoon oregano Bacon drippings or other Pipe Smokers Said To Be Disappearing USE FOR RICE Shrimp rarebit on rice is just one of the many tasty ways to use your share of economical, plentiful rice during the October Nationwide Rice Harvest Festival. Recipes featuring rice are included in today's food columns. shortening 1 large onion, minced .1 tablespoon vinegar 'z cup water Rabbit may be fresh or frozen. If fresh, wash pieces and dry on absorbant paper. If frozen, allow to partially thaw. Cut rabbit into serving-size pieces then sprinkle evenly with monosodium gluta mate. Cover and allow to stand in cool place several hours or overnight. Mix together salt, papper, saffron (you may like more), and oregano; rub into meat. Heat bacon drippings or other fat in deep heavy skillet. Pat should be about one-inch deep. Fry rabbits lowly until rich golden brown on all sides. Place onion in bottom of casser ole; arrange rabbit on top of --.--rx. "I was just four years old when I started my first p i c ture," Coogan Vernon Scott grinned. "It was 'The Kid' with Charlie Chaplin back in 1918, and it launched the biggest child actor in history." Coogan, bald now and as homely as a rhinoceros, earned S6V2 million before he was vot ing age. But by the time various factions were through cutting up his fortune, Jackie ended up with a pittance. Considering his financial dis asters, his plunge to obscurity and the heartaches of growing up in the public eye, why does he want Leslie to experience stardom? "It would be a great gratifica tion for me," Jackie said. "I take a lot of pride in her. Knows Perils of Stars "There hasn't been a real big child star since Shirley Temple and I think the public is ready for one. Besides, I know all the pitfalls of being a kid star, be lieve me, and I will see that she avoids them. "For instance, she can't lose any money she earns. My law, 'The Coogan Law,' would pro tect her from all the financial troubles I went through." Jackie whipped out his wallet and produced a picture of Leslie. VERNON SCOTT United Press Writer She's a blue-eyed, blonde cutey who bears a close resemblance to Jackie when he was that age. "So far Leslie hasn't had any professional experience," Jackie said, "But I'm teaching her things gradually how to walk, turn, lower her eyes all the things I learned as a kid. She dances, too. Worked Up Gag "We've already worked up a little gag. I ask her what her name is and she says, 'Leslie Coogan.' I ask her what Mom my's name is and she says, 'Do die Coogan.' Then I ask her what my name is and she an swers, 'Jackie Cooper.' We all get a kick from that." Jackie has two other off spring, Anthony, 16, and Joan, 10. Neither is interested in an acting career. The heavy-set actor finds char acter roles in television and mov ies. His latest is a supporting role in "The Joker's Wild." "I figure Leslie should be ready for her first movie role in three or four months," Jackie concluded. "So far it's just play for her as it was with me when I was a child actor. Personally, I think she's got the makings to become a truly fine little actress." COLGATE DIRECTOR DIES New York (IP) Henry A. Combine vinegar and water; pour over rabbit. Cover tightly; bake in slow oven, 275 degrees, about two hours, or until rabbit is very tender. Braised Celery A different and delectable way to serve plentiful celery: gets baked for about an hour. Trim and slice 2 large onions into buttered baking dish. Brown 4 cups cut-up celery in 4 table spoons butter. Dissolve two bouillion cubs in l34 cups boil ing water. Blend one tablespoon cornstarch with a little water and add to bouillon; cook until thickened. Combine with browned celery and cook for five minutes. Pour over onions and bake in slow, 325 degree, oven about one hour. Six gener ous servings. rr Boston OP Take it from Da-id A. Fiorelli, the pipe smo ker is disappearing from the American scene. Fiorelli, manager of Ehrlich's, a nearly century-old smoker sup ply house, blames this genera tion's tensions and anxieties. He says modern man is too jittery to be a pipe smoker. "Pipe smokers are traditional ly calm and tolerant," he said. "They are contemplative men who usually think carefully be fore making decisions. "The average man today is too harried to think about anything. I Life has become so speeded up that he thinks he s relaxing when he can take a few drags of a cigarette." Fiorelli said pipe smaking has declined sharply in the past 10 years. And he isn't optimistic about a comeback. "There are still people who prefer a pipe," he said. "Biggest demand comes from university professors, diplomats, clergy men. And, for some reason, air line pilots. "We are not getting the per centage of young people we'd like. Most of them are weaned away by the cigarette compan ies. The new generation regards a pipe smoker as something left over from the Victorian Age." Fiorelli tried cigarettes years ago but didn't like them. He smokes a meerschaum. "Most of your great thinkers were pipe smokers," he said. Milton, Tennyson, Emerson, Thackeray, Stevenson, Kipling, and Mark Twain, to name just a few. Even Queen Elizabeth of England tried a pipe after Sir Walter Raleigh brought tobacco from America. "Which ' reminds me. More women are smoking pipes these days. I don't know how that started. But I'd just as soon it hadn't." TENT SCHOOL Corte Madera, Calif. ftp) The Marin County Day School started classes for 90 second to eight graders in nine striped tents this fall. The children never thought school could be so much fun. The school, a pri vate institution, hopes to go to conventional classrooms when a new building is completed.
