BIX MEDFORD MAIL TRIBUNE Your Health and Its Care BY OR WILLIAM BRADY M O. Readers ibould sddrews laqulrlM loi Or William Brady 2(5 CI Camtaa. Bawsrly Hills. CaliL - DO HAVE SOME A food lupply or diet may teem liberal and varied or "well balanced" and yet unless It in cludes a sud- t a n t 1 a 1 mount of milk and green leaf v e g e tables it may be calcium-poor and Si hence inade quate to main tain health, growth and good nutrition. Hence, as Prof. Sherman Dr. Brady (Chemistry of Food and Nutrl tlon, Macmlllan 37) says: The ordinary mixed diet of Americans and Europeans, at least among dwellers in cities and towns, is probably more often deficient in calcium than In any other chemical element. . Milk contains calcium in abundance approximately a gram 15Vi grains) in the quart and in the most assimilable form for infant, child or adult. As the daily requirement of cal cium for an Infant or a growing child Is nearly 10 to 12 grains it becomes more apparent that "a quart of milk a day for every growing child" la not merely a theoretical concept. After full growth and development has been attained (from the age of 18 to 25 years) the dally calcium requirement is not so great and perhaps a pint of milk a day is sufficient for an adult. Skim milk (milk from which the cream has been removed whether by skimming or by the separator) and real buttermilk (the liquid left in churn after churning butter) are practically as good as whole fresh milk as a source of calcium. Cottage or Dutch cheese and indeed every variety of cheese Is an excellent source of calcium especially when the diet does not Include enough milk. Second to milk and milk prod ucts comes the yolk of eggs as a source of calcium in the diet. Next to milk, cheese and egg yolk, comes the green leaves especially leaves that are good to eat raw, such as cabbage, let- 1 OUT OF 20 ON Washington, Jan, 8.
