Calil SKIM MILK AND BUTTERMILK In the article about vitamin A i food and nutrition, would have in Your Daily Diet recently 1 said: "Not only whole milk, but also cream, skim milk and b u 1 1 e r m ilk (genuine) and skim milk (too often regarded as unfit fur hu man nutrition) are good food sources of vita min A." The vice- K " ill Or Brad? chairman of the food and nutrition commit tee of a county defense council protests that there is no evidence to substantiate such a statement. He says that "according to Sher man's Chemistry of Food and Nutrition buttermilk contains absolutely no vitamin A and skim milk only an insignificant amount." It may be that Prof. Sherman has changed his mind about it since he revised his textbook for the fifth edition (1937), but' I'll settle for the compromise that both items, skimmed (not sep arator) milk and genuine butter milk (not the concoction dairy firms often sell under that name) contain some vitamin A although of course most of the vitamin A in milk is in the but ter fat and there is only 0.3 of the fat left In skim milk (com pared with 4.0 in fresh milk), only 0.5 left in genuine butter milk. As one recognized authority (Prof. Mary S. Rose, The Foun dations of Nutrition, Masmillan, '38) states it: "Milk stands preeminent among food materials as a source of vitamin A, which is not all removed with the butter fat, skim milk con t a 1 n i n g an appreciable amount." Sold aa SHaaay bach araatav Exclutlly it WESTERN THRIFT 1 me believe there is "absolutely no vitamin A" in buttermilk and practically none in skim milk, a few months ago tried to con vince me that I should not feel as I do about the doctoring of oleo margarine with vitamin A and I should not mind if oleo mar garine and other stuff offered as "pure" food is also doctored with sodium benzoate. The young man assured me that a dash of this chemical preservative in margarine or other foods con sumed every day Is harmless, and cites "a thorough study" made under the Remsen board some years ago by a group of outstanding scientists" to that effect. Outstanding scientists my eye. If I have any choice I'll take food NOT containing sodium benzoate. A teaspoonful of butter con tains 100 units of vitamin A. The yolk of an egg contains 825 units of vitamin A. A teaspoon ful of cod liver oil contains 2000 units of vitamin A. Two table spoonfuls of raw carrot or car rot slightly cooked contains 1000 units of carotene, . pro-vitamin A, which, in the body, is at least partly converted into vita min A. CHRISTMAS SEALS FOR OVERSEASGIFTS Christmas packages and let ters going to service men over seas may carry the cheery Christmas seal that fights tu berculosis, Mrs. Elwood Hed berg, president of the Jackson County Public Health associa tion, announced yesterday. The early deadline set by the post master general for mailing Christmas packages overseas will not prevent use of the seals, she stated, for they are already available for such pur poses at the Jackson County Health department in the court house. The regular seal sale will not open, generally, she pointed oui, until November 20. The many requests from mothers, who wished their sons to know that they are carrying on the home fight for good health, are responsible for these plans for early dissemination of seals, which have so long financed the battle against tuberculosis, are a symbol of . good health in many lands abroad, as well as here. Each' letter and package carrying a seal will be a re minder to many that Ameri cans at home are carrying on the good fight to assure return ing service men a healthier world in which to live at peace. Anyone wishing the Christ mas seals now, Is asked to ap ply at the Health department. Mrs. Hcdberg yesterday ex pressed the hope that they will appear on all packages going overseas from Jackson county. Mrs. Ruth Bauer is county chairman of the annual Christ mas seal sale and is making ex tensive plans for opening of the general campaign. Lewis, government hunter from Central Point, returned from the Mount Ashland area yesterday where ho has been hunting bear for the past several days. Lewis stated that he was hunting bear which had reportedly been kill ing sheep at Austie Barron's sheep camp near Mt. Ashland.
