Menus of the Day By Mrs. Alexander George Spuon Bread Recipe Breakfast Menu Cantaloupe Cooked Wheat Cereal Cream Soft Cooked Eg?a Buttered Toaet Coffee Luncheon Menu Cream of Tomato Soup Crackers Sliced Peaches Spice Cookies Tex Dinner Menu Baked Pork Chops Baked Potatoes Escalloped Onions Southern Spoon Bread Celery Baked Apples Cream Coffee Southern Spoon Bread 3-8 cup corn meal teaspoon salt S tablespoon butter 1 cup boiling water 3 egs ; cup milk I teaepoon baking powder Mix cornmea, salt, butter and wa ter. Beat a minute. Add rest of In gredients, mix well and pour Into buttered baking dlh. Bake one hour In very slo woven. Serve In dish In which baked. Baked Pork Chops 4 loin chops 1-3 cup flour 1 teaepoon salt 'i teaepoon paprika 1 tablespoon chopped onions 3 tablespoons chopped celery . 3-3 cup water Have chops cut one Inch thick Roll in flour, fit into baking pan and add rest of Ingredient. Cover and bake in alow oven 60 minutes. Remove lid and brown 10 minutes. Turn chops severtl times during baking. Baked Apples (Serve Warm or Cold) 6 apple 2-3 cup sugar 2 teaspoon cinnamon teaspoon clove i cup raisin 3 tablespoon butter 1 14 cup water 1 tablespoon lemon Juice. Wash and core appleB. Do not peel. Mix sugar, spice and raisin and stuff apple centers. Fit Into small baking pan. Add rest of Ingredient. Bake 40 minute In slow oven. Baste several times during cooking. The spple can be served plain or with cream or custard aauce. Surprises For Children (In Their Lunch Boxes) Children like surprise and a va riety of food whet their appetites. Little surprises, such as candy bars, dates, peanuts, raisin or other food favorites, ahould be included In their 1 un ch boxes or serve d at home lunches. Dinner Serving Four Spanish Veal Baked Squash Orape Jam with Scone Head Lettuce Russian Dressing Lemon Pie Coffee Spanish Veal 8 tablespoon fat 1 pound veal round 4 tablespoons chopped onions 4 tablespoon chopped celery 4 tablespoon chopped green pep per 4 tablespoon flour "4 teaspoon salt 4 teaspoon paprika Vi cups tomatoe Cut veal into one-Inch piece. Melt fat In frying pan, add and brown, veal, onions, celery and peppers. Add flour and mix. Add rest of Ingredi ents. Cover and bake 40 minutes In moderate oven. Stir frequently to al low even cooking. Grape Jam 13 cup grape 3 cups water 8 cup sugar Wash and stem grape. Measure 12 cups, add water. Cover and simmer 10 minutes, Crush well and almnvrr 8 minute. Pour through coarse sieve, pressing all pulp through. Add sugar and simmer until Jam thicken. Thla will require about 60 minutes, atir frequently while cooking. Pour Into sterilized Jars and seal. Scone ' 3 cup flour I 4 teaspoon baking powder 4 teaspoon aalt 1 1 tablespoon sugar 4 tablespoon fat 2-5 cup milk Mix flour, baking powder, salt and sugar. Cut In fat with knife, mixing with knife, and add milk and eg-. Drop portlona of soft dough from tip of spoon onto greased baking pan. Space 3 Inches apart. Sprinkle tops with 8 tablespoon sugar which has been mixed with V teaspoon cinna mon. Bake 10 minute In moderate oren. White Frosting 3 tablespoon soft butter. 3 tablespoons hot cream. teaspoon salt. 14 teaspoon vanilla. 1 1-3 cups sifted confectioner's sugar. Mix ingredient and beat until soft and creamy. Carefully frost tops of cakea. GETTING THE HOUSE QUIET To Improve the flavor, add 4 tea spoon of sugar to eah 3 cup of cooked beets. 4 PORTLAND, Oct. 6.
