Many of these powders, have been prohibited from sale in the East, have been collected by their manufacturers from the dealers with whom they Were left on commission, and shipped to the Pacific Coast. The public knows nothing ahout their quality except vhar. it reads in the news paper adverticen;:nts. In the effort to gain a foot-hold in this market un scrupulous manufacturers of these cheaply made, law j,rade bakiug pow ders have indulged in extravagant statements both with reference to their own and other brands, claiming the most improbable endorsement for their goods and denouncing the brands best known and longest used upon the Pacific Coast. The action of the phyticians of the Board of Health, therefore, in giving the public reliable, authoritative in formation as to the brand of baking powder to be usd to secure the most economical and wholesome food is most valuable and timely. The chief brands of baking powder sold upon the Pacific Coast were col lected and analyzed by Messrs. Thomas Price & Son, the well-known analytical chemists of San Fraucisco'. They found the strength or leavening gas (measured at 100F.) of the brands na.ned as follows: name. Leavening Cas, Cubic inches per oz. KOYA L, 191. (iiant, H0, Gulden Gate Ii3- Or. I'rite's . H3.
