The recipe for "Lemon Date Cookies" will be filed in the "use often" part of your recipe file. The cookies, given individuality with fresh dates, won't be in the cooky jar long that's their one disad vantage 1.EMON DATE COOK IKS 1 cup fresh dates cup shortening 1 cup granulated sugar 2 egRs Vh cups sifted all-purpose flour H teaspoon salt 2 teaspoons baking powder 2 teaspoons grated lemon rind 1 tablespoon lemon juice Pit and slice dates. Cream Add eggs one at a time, beating shortening and sugar together, well after each addition. Sift flour with salt and baking pow der. Blend into creamed mixture. Stir in lemon rind and juice and dates. Drop by tcaspoonfuls onto greased baking sheet. Bake in moderate oven (350 degrees F.) about 15 minutes. Makes about 3 dozen. For a Mocha Frosting you quick ly blend together sweetened con densed milk, strong black coffee, vanilla, confectioners' sugar and cocoa. For a Peanut Butter Frost ing you just make a smooth blend of peanut butter and sweetened condensed milk. What could be easier? No' cooking, no tedious standing over a pot on the stove. Be prepared for second helping on this birthday cake. It'll be that good! Mocha Frosting Hi cups (15-oz. can) sweetened condensed milk 1 tablespoon strong black coffee ! teaspoon salt 2 squares ( 2 oz. unsweetened chocolate !i leapoon vanilla extract Put sweetened condensed milk, coffee and salt in top of double boiler. Mix well. Add chocolate. Cook over rapidly boiling water, stirring often; until thick, about 10 minutes. Remove from heat. Cool. Stir in vanilla. Spread on cooled cake. "If using instant coffee, dissolve I 1 teaspoon in 1 tablespoon luke warm water. Peanut Butter Frosting l'j cups (15-oz. can) sweetened condensed milk 3 tablespoons cream style pea nut butter Gradually stir sweetened con densed milk into peanut butter in top of double boiler; mix well. Cook over rapidly boiling water, stirring constantly, until thick, about 15 minutes. Cool. Spread on cooled cake. Bake in a moderately hot oven (375 degrees F. for 20 min utes, or until lightly browned.
