Easy Frosting On Birthday Cake

recipe for "Lemon Date Cookies"
will be filed in the "use often"
part of your recipe file. The
cookies, given individuality with
fresh dates, won't be in the cooky
jar long that's their one disad

1 cup fresh dates
cup shortening
1 cup granulated sugar
2 egRs
Vh cups sifted all-purpose
flour
H teaspoon salt
2 teaspoons baking powder
2 teaspoons grated lemon rind
1 tablespoon lemon juice
Pit and slice dates. Cream
Add eggs one at a time, beating
shortening and sugar together,
well after each addition. Sift
flour with salt and baking pow
der. Blend into creamed mixture.
Stir in lemon rind and juice and
dates. Drop by tcaspoonfuls onto
greased baking sheet. Bake in
moderate oven (350 degrees F.)
about 15 minutes.
Makes about 3 dozen.

goes for decorations, entertain
ment plans and refreshments. As
far as the refreshments are con
cerned the big thing naturally is
the Birthday Cake. With the va
riety of cake mixes on the market
today, this part of the menu has
bren greatly simplified. Add to
this fact, the variety of delicious
easy frosting you can make and
your cake is bound to be a culinary
triumph.
For a Mocha Frosting you quick
ly blend together sweetened con
densed milk, strong black coffee,
vanilla, confectioners' sugar and
cocoa. For a Peanut Butter Frost
ing you just make a smooth blend
of peanut butter and sweetened
condensed milk. What could be
easier? No' cooking, no tedious
standing over a pot on the stove.
Be prepared for second helping on
this birthday cake. It'll be that
good!
Mocha Frosting
Hi cups (15-oz. can) sweetened
condensed milk
1 tablespoon strong black coffee
! teaspoon salt
2 squares ( 2 oz. unsweetened
chocolate
!i leapoon vanilla extract
Put sweetened condensed milk,
coffee and salt in top of double
boiler. Mix well. Add chocolate.
Cook over rapidly boiling water,
stirring often; until thick, about
10 minutes. Remove from heat.
Cool. Stir in vanilla. Spread on
cooled cake.
"If using instant coffee, dissolve I
1 teaspoon in 1 tablespoon luke
warm water.
Peanut Butter Frosting
l'j cups (15-oz. can) sweetened
condensed milk
3 tablespoons cream style pea
nut butter
Gradually stir sweetened con
densed milk into peanut butter in
top of double boiler; mix well. Cook
over rapidly boiling water, stirring
constantly, until thick, about 15
minutes. Cool. Spread on cooled
cake.

When you want a quick meal
that's a family favorite you can
always rely on a good spaghetti
dinner. The packaged dinner con
tains all the essentials of a per
fect dish quick-cooking spagliet
ti, ready-to-neat sauce, meat and
mushrooms, and tangy grated
cheese. It can be made ready to
serve in 12 minutes. Then, with a
salad, crusty bread or rolls, and
a good dessert you really have a
meal for three that any chef might
be proud of.
A packaged spaghetti dinner is
a reliable choice for the children's
lunch when they hurry home at
recess. It is quick to prepare, easy
to eat and satisfying. And of course
it can be served in place of pota
toes at dinner with chops, beef
balls or meat loaf.
There are two appetizing ways of
serving the spaghetti with it's at
tendant sauce and grated cheese.
One is to mix them all lightly but
thoroughly just before serving. The
other is to pass the sauce and
cheese separately after the spa
ghetti has been dished.
Still a third way is this: Drain
the cooked spaghetti and put it in
a greased casserole a small one,
for one spaghetti dinner, which
serves three; a large one if you
want to serve six with two of Uie
dinners. Prepare the sauce accord
ing to package directions and com
bine lightly with the spaghetti in
the casserole. Then sprinkle with
cheese. Bake in a moderately hot
oven (375 degrees F. for 20 min
utes, or until lightly browned.
