Christmas day In America, while National feast day and a time of joyous hearts and cheerful giving, nevertheless has its problems, es pecially for the hostess who must plan the Christmas dinner. Follow ing Thanksgiving by barely a month as It does, it offers the ques tion of whether fowl or beast shall be served, and what kind. While Thanksgiving is traditional ly national turkey day, the bird also has its proponents during the Christmas season. Christmas din ner, however, by virtue of its world wide rather than national observ ance, as in the case of Thanksgiv ing, allows of a vastly wider range in choice of the piece de resistance, not being bound by the tradition of strictly national custom. Substitution of another meat for turkey at Christmas may be found in the desire of the hottest to avoid duplication of the Thanksgiving menu, or In the effect of much Christmas giving on the family purse. StiU another reason may lie In the fact that if one Is to keep with in a budget of 11.00 or less ner ner- son, some cheaper meat must be substituted to offset the seasonal general Increase In the cost of fresh vegetables. Pineapple whip, while It may be made either as a rich dessert or fruity enough to classify as a glori fied salad, may be made successful, ly. as follows: Soak one box of gel atin in one-half cup of milk half an nour. neat pint ot cream suit, and add cup of sugar. Heat milk and gelatin and mix witn cream. Add can ol chopped or crushed pine apple as desired, also the juice if desired. Add chopped marshmel lows and walnuts as desired. Let cool and serve. This will stand sev eral hours, however. This recipe may make a little more than is desired for eight people, but it retains its attractiveness until the next meat It is believed that 50 cents worth of salted almonds will satisfy the after- dinner desires of the average group of eight, although any quan tity or kind may be used. Cream the fat and sugar. Ada tne orange juice and beat for 2 minutes. Add the rest of the Ingredients and when a stiff dough forms, roll out very thin on a well floured board. Chill or place in a cool place for 1 hour. Use - a doughnut cutter and cut out the cookies. Place 2 Inches apart on a greased baking sheet and bake in a moderate oven for 10 minutes. Cream the fat and sugar. Add the molacKPR. evo ttnH mlUr anA haal f 2 minutes. Add the rest of the In gredients and when a stiff dough forms, divide it and roll out part on a well floured board. Let stand In the cold for H hour. Cut out the gingerbread "boys" and place 3 Inches apart on greased baking sheets. Place cloves for eyes, nose' and mouth and currants for vest buttons. Bits of raisins, dates or prunes may be used for the eyes If desired and almonds stuck in place for ears. With the blunt end of a knife mark outlines for the coat and trousers. Even facial expressions may be outlined. Bake the "boys" in a moderate oven for 15 minutes. The gingerbread "boys" may be baked without feature tracings and! when cooled, facial workings and clothes outlines may' be made with I soft frosting traced by a tooth pick. If the "boys" are to be hung on trees, fierce holes in the tops of the heads before they are baked. U. S.
