26-(Sec. Ill) Statesman, Salem, Ore., Fri., Feb. 21, '5S Potato Soup . One of Best For Winter There'i more variety possible for potato soup than one usually imagines. Here we nave several suggestions. Ql'lCK POTATO SOl'P t cup thinly sliced raw potatoes , i cup finely chopped onion V cups boiling water 14 cups milk 1 tablespoon butter or margarine t teaspoon Worcestershire sauce 1 teaspoon salt Pepper Add potatoes and onion to the boiling water, (.over, ana coo lor is to 2ri minutes, or until Dotatoes are tender. For a touch of color, garnish each serving with chopped parsley, grated cheese, croutons, diced crisp bacon, or finely cut watercress or cnives Hakes 4 servings. 1 cup each Variation: Cut 2 frankfurters in to 14-inch slices and add them to the soup with the milk. POTATO-AND-FISH CHOWDER H pound fillets of cod. haddock or other white fish, cut in small pieces 1 cup diced raw potato cup diced raw carrots 2 cups water 2 ounces salt pork, diced 4 cup chopped onion 14 tablespoons flour 1 cup milk . ll4 teaspoon salt teaspoon Worcestershire sauce Pepper Cook fish, potatoes, and carrots in the water for about IS min utes. Do Dot drain. Cook the salt pork in a fry pan until crisp; remove from pan. Add the onion to the fat and cook for a few minute. Blend in the Hour and add the milk. Combine with the fish and vege tables and add seasonings. Sim mer for 10 miautes, stirring fre quently. Garnish with the salt pork crumbled very fine. Makes 4 servings, 1 cup each. HAM CHOWDER b cup finely chopped onion 1 tablespoon butter or marg arine 1 cup diced raw potato H cup coarsely chopped cooked smoked ham 1 teaspoon salt 1 teaspoon Worcestershire sauce Thyme Few grains paprika H teaspoon celery salt 14 cups boiling water 2 cups hot milk 1 tablespoon flour 2 tablespoons water 4 cup cooked peas Cook onion in butter or marga rine until it is golden brown. Combine onion, potato, ham. seasonings, and boiling water and cook IS minutes. Add hot milk. Blend water with flour, stirring until smooth. Stir into the vege table and - meat mixture. Cook gently until slightly thickened. Add peas, and heat If desired, sprinkle with chopped parsley. Makes 4 servings, 1 cup each. Nut Cake Has Fine Texture Rich Walnut Loaf is reminiscent of the old time, good-tasting pound cakes. It's a very fine-grained loaf that's studded with golden, full- flavored walnuts. RICH WALNUT LOAF i cup walnuts 1 cup shortening (half butter or margarine) IV4 cups sugar 4 eggs 1 teaspoon vanilla 2 cups sifted cake flour 14 teaspoons baking powder teaspoon salt 4 cup milk Chop walnuts coarsely. Cream shortening and sugar together thoroughly.
