Italians Give Macaroon Idea Among the treasared desserts of liny, ute amarettl or macaroon Is considered one of the most typ ical, in the United Statei. The oencateiy almond-flavored crunchy goodness of the atnaretti is no doubt, well known to you, and probably it's one o( your favorite irrau. This version of the Italian spe cialty Which has been rlpvelnnvrf by Sugar Information, Inc., is rauier easy to prepare. The only ingredients you need are almonds, sugar, salt, egg whites and al mond extract. The only real ef fort la chopping the nutmeats. They're wonderful to serve with afternoon tea or as a delectable accompaniment to fruit compote dessert. These delicious cookies are bound to please everyone, so it would be wise to make up several batches of amaretti they're sure to go fast. Here is the recipe: AMARETTI (Macaroeait Vi pound blanched almonds 1 cup sugar Dash of salt 1 egg whites 'i teaspoon almond extract Chop blanched almond until they are reduced to a powder. Add sugar and salt and mix well Beat egg whites until stiff but not dry. Fold almonds and sugar into egg whites. Add almonds extract and blend. Drop by teaspoons onto buttered and floured cookie sheet. Sprinkle with confectioners' sugar. Allow to stand 2 hours before baking. Bake in slow oven (300 degrees) about 25 minutes or until golden brown. Yields 32 macaroons. Almonds Add to Apricot Sauce Apricot Aimona 2auct is espe cially suuaDie 10 serve with bam, pork or tongue. Almonds,. slivered and gently toasted, add crunch and good flavor. APRICOT ALMOND SAUCE V cup slivered blanched almonds V cup cooked unsweetened dried apricots 1 cup cooking liquid from ' apricots V cup sugar 1 tablespoon cornstarch Few grains salt Place almonds in shallow nan and roast in slow oven (300 de grees) about IS to 20 minutes, stirring occasionally. Cut apricots into strips. Combine apricot liq uid, sugar, cornstarch and salt. Cook and itir until clear and thickened. Stir in apricots and al monds. Serve at once. Especially suitable to serve with ham, pork or tongue. Makes about 1Mb cups sauce. MONDAY FOOD For an extra special cream soup made from fresh asparagus, cook the stalks in chicken broth and then use the liquid leftover for your cream sauce.
