Not as noticeable, perhaps, but just as important in all these baked foods is the nutritional qual My of the flour with which you make them. Be sure to buy en riched flour. Cherry Puffs, nice at breakfast time, are a wonderful treat at mid morning or afternoon coffee. CHERRY PUFFi 1 package yeast, compressed or dry cup lukewarm water 1 cup milk V cup shortening Vfc cup sugar 1 teaspoon salt tV cups sifted enriched flour i about) 1 egg, beaten to eup chopped candied cherries Granulated sugar Soften yeast in water. Scald milk and add shortening, sugar and salt. Cool to lukewarm. Add m cups flour and mix well. Add softened yeast and egg. Beat well. Add more flour to make a stiff batter. Beat thoroughly until smooth. Cover and let rise until bubbly (about 1 hour). Stir down and add cherries. Mix well. Drop by spoonfuls into greased muffin pans. Sprinkle with sugar. I-et rise until doubled (about 30 min utes). Bake in moderate oven (375 degrees) 20 to 2S minutes. Makes 1V dozen 1-inch sweet rolls. CHERRY SURPRISE CAKE 2 cups sifted enriched flour 1 tablespoon baking powder 1 teaspoon salt !'- cups sugar b cup bydrogenated shortening l cup milk 1 teaspoon vanilla extract 3 egg whites (about V cup) 1 cup drained' sour pitted cherries (unsweetened) Cherry Frosting Sift tocether flour, bakins? now- ,der, salt and sugar. Add shorten ing ana 2-1 cup mim. mix to mend. Beat 3 minutes at medium apeed of electric "mixer or 300 strokes by hand. Add remaining milk, vanilla extract and u whites Mix to blend. Beat S minutes or xkj strokes longer. Fold In cher ries. Bake in 2 greased Daner lined t-inch round pans or greased x-incn murrin pans, mime 2-3 fun. Bako in moderate oven 3S0 de grees 30 to 35 minutes. Frost with Cherry Frosting. Makes 2 l-inch layers or I dozen J-lnca cupcakes. CHERRY FROSTING lVi cups sugar tablespoons unsweetened cherry juice 1 tablespoon corn syrup 2 egg whites 1 teaspoon vanilla extract Few drops red food coloring Combine all ingredients except vanilla extract and food coloring in top of double boiler. Mix well Place over boiling water. Beat constantly with rotary beater until mixture holds its shape. Remove from heat, add vanilla extract and food coloring. Beat until cool. Frost sides and tops of cakes. Makes frosting for 2 8-inch layers or 3 dozen cupcakes.
