It bnhoovosi all of us to b so familiar terms with that all -important food part called protein. It is necessary in the diet not only for the repair of worn-out tissue but for building; new tissues as well. When the body weight and strength are threatened by dis ease, the quality of th diet is much more important than the quantity or the calorie value. This is especially true la regard to the proteins. . The important proteins come from such foods as meat, milk, eggs, beans, and peas. It Is espe cially important to give the right type of protein foods in sufficient amounts In cases of Injury er burns, following surgery, and during chronic or prolonged in fections. Ned Proper Fsed , Ths amount of protein in the diet may be deficient because the food given is not proper, or be cause esting is difficult owing to age or to such conditions as ulcer of the stomach, chronle kidney disease, or other illnesses, i Some times, enough food is esten, but it is not taken up and used by the body becsuse of vomiting. diarrhea, bowel Infections, or liver disease. If, for some reason, the amount of protein in the diet is strieted, the water Intake should also be reduced, since large amounts of fluids will cause the body to eliminate some of .the proteins. Either too much or too little salt is harmful in such cases. There should be about one gram of salt (130 of an ounce in a diet which supplies about 1800 calories a day. Sufficient protein in the diet will reduc th burden on the liver. It would appear that egg white is an excellent source of protein, as Is whol egg and whole milk. There are certain preparations made up of amino acids which are the substances of which pro teins are composed. These should be utilized In special cases, but in a person who can get enough protein food, these substan are, as a rule, unnecessary. Use of Pretetn Among the conditions which in terfere with tho us of protein by the body are disorders of the blood, glandular disturbances. Including diabetes, toxic goiter. and gout. In these conditions, the protein ' Intake should be care fully controlled and, of course, the proper treatment for the vari ous disorders earned out. ; Before and after operations special attention should be given to the proteia intake In the diet As a matter of fact, every day the healthy person should see that his diet contain enough of the right kinds of proteins. Some cases due to infection; others to tho wrong use of laxatives and Im proper diet. The length of time required for a cure depends j upon jtho cause.
