In selecting fruit the greatest care should be taken to see that It is not ; overripe. Berries that have been picked more ' than twenty-four hours are too old to make good Jellies and preserves. A cheesecloth bag will be found use ful In straining the fruit through tho colander. Jelly glasses without fitted tin or glass tops can be covered by pieces of writing paper. These pieces should be dipped In the unbeaten whites of an egg and pasted at once over the glass. Plenty of sugar mnkes rich nnd luscious preserves and makes the fruit keep much longer. To prevent Jars from cracking when the hot preserves are poured In them, set on cloths dipped In cold water ant? partly wrung out. Firing to a boll a gallon of vinegar in which you put a cup of sugar, two tablespoons each of whole peppers and cloves, one tublespoon allspice nnd eight blades of mace. Poll for ten minutes, put the nuts In a crock and pour the boiling vinegar over them. At the end of three days drain off vinegar, bring It to tho boll again and pour bock of the nuts. Cover and season for six weeks before eating. Muiile Illano Itlaiiu;e. A delicious sweet, and, If properly chilled, a substitute for Ice cream. In a double boiler heat one quart of sweet nillk, thicken with four heaping tnhlf 8mm)Iis of corn starch, moistened with just enough cold milk to dissolve It. Stir until smooth nnd thick, adding gradually a cup of very thick, real maple sirup. Do not add nil the sirup at once, and stir continually. If you have no good uiuplo sirup ut hand, buy mnple sugar and boll It down until It is thick, almost ropy. When the mixture Is almost stiff, pour Into a mold, dipped Into cold water. When Ice cold, turn out, and serve with whipped cream. Moluiaea Candy. Half gallon of West India molasses, one pound of sugar, quarter of a pound of butter. Hull for three hours, and Just before the candy is done add the Juice of a lemon. Try some by cool ing it on a plate to see If It Is suffi ciently stiff. Tull as for sugar candy for half an hour. A little vinegar on the hands will make the taffy crisp. It should be a light yellow color when pulled. A Cooling; Deaarrt. For a plain Ice which Is the basis of all Ices, boll a cupful of sugar and two cupfuls of water to a smooth sirup ; . add fruit Juice or lemon, or both ; strain, cool, add two egg whites, tin- I beaten, and freeze. A little lemon Juice Is always really necessary, with other fruits to bring out the Savor. I The entire inner portion of our bodies is covered with a soft, delicate lining called mucous membrane; this is kept ia healthy condition by the nourishment and vital vigor it receives from the blood.
