boll a gallon of vinegar in which you
put a cup of sugar, two tablespoons
each of whole peppers and cloves, one
tublespoon allspice nnd eight blades of
mace. Poll for ten minutes, put the
nuts In a crock and pour the boiling
vinegar over them. At the end of three
days drain off vinegar, bring It to tho
boll again and pour bock of the nuts.
Cover and season for six weeks before
eating.
Muiile Illano Itlaiiu;e.
A delicious sweet, and, If properly
chilled, a substitute for Ice cream. In
a double boiler heat one quart of sweet
nillk, thicken with four heaping tnhlf
8mm)Iis of corn starch, moistened with
just enough cold milk to dissolve It.
Stir until smooth nnd thick, adding
gradually a cup of very thick, real
maple sirup. Do not add nil the sirup
at once, and stir continually. If you
have no good uiuplo sirup ut hand, buy
mnple sugar and boll It down until It is
thick, almost ropy. When the mixture
Is almost stiff, pour Into a mold, dipped
Into cold water. When Ice cold, turn
out, and serve with whipped cream.
Moluiaea Candy.
Half gallon of West India molasses,
one pound of sugar, quarter of a pound
of butter. Hull for three hours, and
Just before the candy is done add the
Juice of a lemon. Try some by cool
ing it on a plate to see If It Is suffi
ciently stiff. Tull as for sugar candy
for half an hour. A little vinegar on
the hands will make the taffy crisp. It
should be a light yellow color when
pulled.
A Cooling; Deaarrt.
For a plain Ice which Is the basis of
all Ices, boll a cupful of sugar and two
cupfuls of water to a smooth sirup ; .
add fruit Juice or lemon, or both ;
strain, cool, add two egg whites, tin- I
beaten, and freeze. A little lemon Juice
Is always really necessary, with other
fruits to bring out the Savor. I
