Set tofu aside. 5. If you are using a n o n stick pan heat it slightly on m ed iu m -h ig h heat (about 30 seconds) before adding oil. 6. If y ou are using a cast iron pan, please heat for about 1 m inute to 1 1/2 m in utes on m edium -high heat. C ast iron is very thick and you w ant the pan to be heated evenly before adding the tofu. 7. A dd oil to heated pan. 8. G ently spread oil over the entire surface o f the pan. 9. Set the tofu pieces in the pan, leaving am ple room betw een them . T hey should sizzle w hen p laced in the oil. S prinkle the tops w ith salt and a little cayenne pepper. 10. N ow , the M O S T IM P O R T A N T step is - L E A V E T H E M A L O N E for about 6 o r 7 m inutes. Just gen tly shake them to m ake sure they don't stick to the pan. D o N O T turn them o r agitate them in any other w ay. W hen you see a g olden cru st b eginning to creep its w ay up the sides o f the slices, turn them and spice the o th er side. A dd m ore oil if the pan seem s too dry. 11. T he second side w ill only take ab o u t 4 m in u tes to cook. 12. W hen they are evenly brow ned take them out o f the pan and place them on p ap er tow els to drain.
