The land where reggae was l^jrn, where arts flourish right along with the out-of-this-world flowers and fascinating fruits, is the same land that enjoys food and drink. A f ter all. the loveliest o f rums are made there, by Appleton Estates, a very old name in the rum arena, where they still have in use aged upper stills to give their rums their distinctive flavor. And the Blue M ountain coffee, judged to be t|»e best coffee anywhere, is at home in sunny Jamaica. Allspice is a very big berry when you consider that Jamai ca provides 85 percent o f the world's supply. And their ginger is a staple on any spice shelf in our country. Jamaicans who are celebrating their twenty-first year o f indepen dence are making a year-round festi val o f the event. So— let’s have the merry tinkle o f a mile-high rum drink, get out the festive decora tions, and have a ball! M ake life happier with a dish everyone will like, chicken with marvelous mush rooms, topped with thinly sliced Bermuda onion, and nesting in a sauce that ends up in a super rummy gravy. Gold Rum Preheat oven to 400 °F. Bake 15 minutes. Take out o f oven and place union slices over chicken pieces. Add sliced mushrooms. Combine cream of watercress soup with rum and pour over chicken, onions and mushrooms. Reduce oven tempera ture to 35O°F. and bake I hour. Serve over rice.
