Veal loaf. 2 lbs. veal ground in meat chopper. 1 teaspoonful minced on ion. 1 teaspoonful salt. y teaspoonful ground clovea, pinch age, cupful crlsco. 2 eggs, 1 cupful breadcrumbs. Add crlsco to chopped meat, season with spices, add bread crumbs and put together with well-beaten eggs; place into well criscoed pan and steam for two hours. If open oven is used, place the pan containing the veal loaf "in larger vessel con taining 1 cupful water to prevent crust being formed; bake one hour. Serve on platter garnished with watercress and to mato sauce, FROZEN SALAD. , A medium-sized tomatoes. 1 large cucumber. 1 cupful cel ery. 1 green sweet pepper. 1 tsblespoonf ul grated onion, 1 tea spoonful Kitchen Bouquet. 1 teaspoonful fresh grated horse rad ish, 1 teaspoonful salt. Put together with boiled dressing and press in criscoed mold. Pack in salt and ice, one part salt to two parts ice. for two hours. 3ip mold in hot water for a second before unmold ing on salad dish. Garnish with lettuce and celery curls. BOILED DRESS ENG. Yolks of 10 eggs or yolks of 4 eggs may be used, in which case add 1 tablespoonful flour to dry Ingredients; 1 teaspoon ful prepared mustard. 1 teaspoonful salt, 1 teaspoonful celery seed, H taespoonful white pepper, dash cayenne, cup su gar, 1-3 cupful melted crisco. Beat yolks very light, add sugar and other dry Ingredients, pour melted crisco In last, beating well; have boiling in double boiler 1 cupful mild white vinegar, pour egg mixture into boiling vinegar and stir until thick. This keeps indefinitely if sealed in a glass jar.
