i nwi > Tastier than razor clams i < i ▼ <> i i J»' </ I A is U T U / rv y jl Unpopular squid a delicacy, but hard to market in Oregon Kew people consider squid when p ickin g out th e ir menu fo r the week In fact, m ost people’s im pression of a squid comes from Jules V erne's fic tio n a l “ 20,000 Leagues U nder the Sea ” But seafood technologists c la im that squid, a re la tiv e of the cla m , is vastly un d e r rated as an entree Besides being nourishing and a low c a lo rie protein source, squid are econom ical and m ore savory than razor clam s, ac cord in g to researchers D u n can Law and D ave C ra w ford “Squid is very bland, but absorbs flavo rs n ic e ly ,” Law said The two m en have helped develop a num ber of Oregon fish products like shrim bo, a rockfish s h rim p patty w hich can be found in m any restaurants (.aw said he likes to saute squid, Chinese style O rie n tals have been using squid in m any ways fo r a long tim e, he pointed out “They d ry them , shred them and add a little sugar and soy sauce to m ake a can d y ,” I ^ w said. O regon m ay also have an am p le sup pie of squid in its w aters, but few fis h e rm e n p u rsue it because they have few, if any, Oregon buyers to sell to No study has been done to determ ine the num be r of squid o ff the Oregon coast, but la rg e nu m be rs were found near Coos Bay d u rin g purse seining studies Squid was the most ab un d a n t la r g e in v e r te b r a te caught — about one in every 33 square m eters of surface net area That translates in to im pressive num bers and makes it logical to assume that there are large concen tra tio n s of squid o ff the Oregon coast. No e s t im a te s a re ava ila ble, but researchers pre dict there are m ore than enough squid to support a local fish e ry in Oregon. E v e n w ith th e la r g e n u m b e rs , th o u g h , it is u n like ly that a fish e ry w ill develop because of the sm all m a rke t, C ra w fo rd predicted “ It's a delicious seafood, b u t it w i l l ta k e som e m a rk e tin g ,” C ra w fo rd said “ I th in k it has to be process ed into some kin d of battered and breaded item so that people w ill buy and use i t . ” He said that the m arke t fo r squid w ould have to be s ta rte d in s titu tio n a lly , in re sta u ra n ts, before squid becomes com m onplace in Oregon superm arkets He suggests s tim u la tin g a m arke t by developing test tastin g panels to com pare squid w ith other seafood pro ducts such as razor clam s But C ra w ford w o n't do the w ork h im se lf w ith ou t special funding “ It's an excellent product, but lik e m any under utilized species, in o rd er to gel it m arketed you have to so some product developm ent THRIFTWAY...PART OF YOUR COMMUNITY!
