This removes some of the oil. Rinse niter scrubbing and rub the Inside with a cut onion. Season with suit nnd pepper and sprinkle Inside and out with lemon Juice. Hub the inside with salt, pepper and powdered thyme. The bird is now ready to stuff. Stuff and place on rack In roast er. Sprinkle with salt nnd pepper. Put Into a hot oven. und roast one hour. Hour off fut. Dredge with, flour und put a thin slice of salt pork on each side of the breast. Redifce heut nnd roast for two or three hours, depending on the age of the goose. ' Soften gelatine In cold water for ten minutes. Grate chocolate uml add boiling water, stir until melt ed. Add sngur and hot, milk. Uring mixture to the boiling point and remove at once from the fire. Stir In softened gelatine, let stand until cold and stir In suit, vanilla und prepared fruit nnd nuts. Turn Into a mold and let tund severul hours or over night In a cold place. I'nmold and servh garnished with whipped cream and candied cher ries. Ginisrrhrtwl Ho much for the dinner itself. The gingerbread house Is our next consideration. This should ' be (baked one or two duys before. Christ mns and hidden in a safe place until wanted. A good cookie mixture Ls baked in six sheets. Two are tell by sev eti inches, for the sides of the house. Two ure six by ten for the ends of the house and two ure ten by three for the roof.
