A Christmas
Dinner By
Sister Mary
(lly Sister Mnry)
Goose seems to bo n.s traditional
for Christinas as turkey for
Thanksgiving. While every family
have certain dishes they like to
serve Christmas after Christinas
each hostess likes something a lit
tle different when it comes her
turn to entertain the kinsmen.
A different stuffing for the goose,
nn uniiHuul sauce, an out of the or
dinary salad or a novel dessert will
add Interest to the family dinner
that may be orthodox in other res
pects. Christmas Is nlways essentially
tho children's day so thu dinner
should not be overburdened with
forbidden foods,,- Tho vegetables
should bo carefully planned with
the juniors in mind and while a
"taste' of the festive dishes may
be permitted, the simple, whole
some foods 'must bo u.sed to satis
fy appetite and nourish.
A ( euteri'lecu
As for (he decorative centerpiiro
j for tho Christmas tublo this year,
'why not Iry a gingerbread hoii.se

,Can you im::Rine the lhrill of nib

J piece of n house. . ;
The following menu is not brln
lling with new dishes, but does
have one or two poinls that make
it rifferent anil worth considera
tion. It begins with on oysTcr cocktail
, for several reasons. First the oys
ter are nourishing und easily d
1 gestcd, second they require- no
rooking and extra fusing at the
I last minute and third they-are at
their best at (his time of year. Al
lan with the. cocktail sauce ihey
form a piquant appeti.cr that Is
not so highly flavored as 1o dull
I he palate to foods to come,
f The tomato bouillon carries out
the Christmas colors est helically
and stimulates the digestive juices
dtetlcally.
Roust goose with chestnut stuff
ing provides the piece do resistan
ce. The sauce Is u bit unusual and
most delicious.
The vegetables are planned with
children In mind. And so Is the
salad.
Tho plum pudding Isn't really
plum pudding at all but a gelu
tine pudding full of fruit hut not
us rich und heavy us the steamed
pudding.
Stuffed celery In place of plain
dressed celery is planned on a fes
live touch und becuuse cheese . is
not used elsewhere in the menu.

Ilow to Serve
Of course the table ls resplend
ent with the he.st" linen, "best"
silver und ''besl" dishes. The cen
terpiece Is In place uml the cock,
(tails are served when the guests
Isit down to the table. The celery
and olives may be on the table or
if u maid Is In attendunco they are
passed und then placed on 1he
table to stay unlit the remoal of
the main course.
The cocktails nre removed, leav
ing the service plale In let tit of
ach guest and the bouillon cup in
its saucer placed on the . service
plale. ...
The bouillon cups are removed
from the service plates ufler the
second course. Then the. service
plale Is removed with one hand,
the dinner plate served with goose
and stuffing is placed with Iho
other hand. The host may enrvo
and serve the plates if he prefers
or they may be served from tho
kitchen. If Ihe dinner 1s maldless,
it means much to the cook and
hostess If the man of the house will
carve.
And now for tho goose. A so
called "green goose" (s the- choic
est, but one up to eight months old
is good.
Scrub finoso Well
Scrub the bird well with hot
soap suds when It comes from the
butcher. This removes some of the
oil. Rinse niter scrubbing and rub
the Inside with a cut onion. Season
with suit nnd pepper and sprinkle
Inside and out with lemon Juice.
Hub the inside with salt, pepper
and powdered thyme. The bird is
now ready to stuff.
Stuff and place on rack In roast
er. Sprinkle with salt nnd pepper.
Put Into a hot oven. und roast one
hour. Hour off fut. Dredge with,
flour und put a thin slice of salt
pork on each side of the breast.
Redifce heut nnd roast for two or
three hours, depending on the age
of the goose. The joints should
separate easily when the goose iw
done. Jf a bird Is more than eight
months old Is should be. steamed
for two hours before roasting.
