II A 14 1 a'u vo W l"Klt" FACTS. Drought out by the Official Gov- " , vriiment Tel. From the C'luVagu Tribune. Thu publin ia uluy ieioulve to U)tgeNlion alxtut the food it eat, tireat iuUrest hu been taken iu the investigation made by the United Htatu aud Canadian governments aud by thu different board of heidth to how the purity or impurity of milk, baking powders, spieea, aud other articles of daily use in the culinary department of our households, J nut now the subject of baking Hwder is claiming public attention. We all deiro nuro aud wholeaome bread aud this cannot be had with the use of impure or poisonous baking powder. There can he no longer any quostion that all the cheaper; lower urnde of baking powderfl contain either ul nm, liuieor phcapbutic acitl. The oflieial anHl.vei by the U. tiled State aud Canadian goveruiuentii have therefore been studied with in terest and they have pretty clearly -stablihed the facts upon this sub ject. The United Slate government report give the name of eighteen well known powd rs, some of them advertied a pure cream of tartar baking powders, that contain alum. The reiiort shown that, the ltoyal Baking Powder wan found tho hihest in leavening lrenglh evolving H0 6 cubic inches of ga per single ounce of powder. Theio were eight other brands of cream of tartar powders levied and their average etrenglh was 111.5. cubic inches of ga per ounce of powder. The Canadian government investi gation were of a itilt larger number of powder. Tho Royal Baking Pow der was here also sliowu the purest and best in strength, c.m'atning 129.32 'ibio inches of leavening gas per ounce of oowder. Nine other cream of tartar powders were tested, lliei average strength being rKirted to be 89 cubic inches of ga per ounce. These tieure are very instructive to the practical housekeeper. They indicate that the ltoyal Baking Pow der KOes more than 33 per cent. further in use llian tho others, or is one-third more economical. Still more important than this, however, they nruve thi iioimlar article hu been brought to tiiM highost degree of purity for to it superlative purity tin superiority In strength is due and couseuuttntly that by it ue we may lie insured Hie purest and most whole some lood. The powder of lower itrcngth : are found to leave large amount of inert matter in the food. Thi fact I em phasized by the report of the Ohio State Food Coimiiitsioner, who, while tinding the Royal practically pure, found no ollir powder to contain less than 10 per cent, of inert or foreign matters. The public intnrosl in this question has Iikewiie caused to be madu in vestigation by our local authorities. Prof. W. 8. Haine, of Rush Medical College, consulting chemist of the Chicago Ihuird of lleilih, ha found result similar to those reported by tho national and Canadian authorities. Dr. Haines say: Rush Medical Cou.kgb, Chicago III. I have recently obtained sample of the chi f baking powders in the market, and have uljeeled Ihem to caref..l chemical examination to de termine their purity, wluilesomeuess aud leavening power. A tho result of my test I rind the Royal Baking Powder upcrior lo all tho ethers in every respect.., It i entirely free from all adulteration and unwholesome impurity, and in baking it give off a greater volume of leavening ga than any other powder. It i. therefore. not only the purest, but also the stiOngest powder with which I am acquainted. , ' Walter 8. Ha miss, M. D. Consulting UbomUt, Chicago Board of Health.. - The talitic show that there i used in the manufacture of the Royal Baking Powder more than half 61 all the cream of tartar consumed in the United State for all purposes. The i... f,,i uulri thus indicated for the Royal Baking Powder greater than that of all o'.ner o.ikiuk v. biued i. perliap. even a higher ut.tHnn th.in that already quoted of .uperioiviv of thi article, and of it JIIHTOHICAL.
