articles of daily use in the culinary
department of our households,

We all deiro nuro aud wholeaome
bread aud this cannot be had with the
use of impure or poisonous baking
powder. There can he no longer any
quostion that all the cheaper; lower
urnde of baking powderfl contain

have therefore been studied with in
terest and they have pretty clearly
-stablihed the facts upon this sub
ject. The United Slate government
report give the name of eighteen
well known powd rs, some of them
advertied a pure cream of tartar
baking powders, that contain alum.
The reiiort shown that, the ltoyal
Baking Powder wan found tho hihest
in leavening lrenglh evolving H0 6
cubic inches of ga per single ounce
of powder. Theio were eight other
brands of cream of tartar powders
levied and their average etrenglh was
111.5. cubic inches of ga per ounce
of powder.
The Canadian government investi
gation were of a itilt larger number
of powder. Tho Royal Baking Pow
der was here also sliowu the purest and
best in strength, c.m'atning 129.32
'ibio inches of leavening gas per
ounce of oowder. Nine other cream
of tartar powders were tested, lliei
average strength being rKirted to be
89 cubic inches of ga per ounce.
These tieure are very instructive
to the practical housekeeper. They
indicate that the ltoyal Baking Pow
der KOes more than 33 per cent.

than 10 per cent, of inert or foreign
matters.
The public intnrosl in this question

vestigation by our local authorities.
Prof. W. 8. Haine, of Rush Medical
College, consulting chemist of the
Chicago Ihuird of lleilih, ha found
result similar to those reported by
tho national and Canadian authorities.
