To a greater or leaser degree tho Idea generally prevails that Sunday jneals should be heavier and rnoro elaborate than those planned for the lx week days. This probably orig inated partly from a desire to empha size tho day and partly because it is tho one day in the week on which fathers and' grown brothers are privil eged to enjoy three homo meals. Tho planning and serving of special dishes is to bo commended, buttho1 fact that thoy rooy bo too hearty, when Jack of usual oxcrciBo and work is Halcen into consideration, is all too fre quently proven by the Monday head-. jjcho and lack of mental energy. Among more thoughful people it is quite customary to And a very plain -dlnnor, followed at night by a supper Which includes ono or more hot dish es. Such suppers are often spoken of as "high teas." As to the elaboration of menu, it should dopend wholly upon the amount of service which can bo commanded. It is Always served with punctilious cere mony, and while no formal Invitations are glvon In advance, tho friends who xnay drop In late fh the afternoon are usually asked to remain. On. tho other hand, thero often re curs to the memory of tho writer a Sunday tea table at which she has fre quently been a guest. A home of re finement but of moderate meanq, the ono general maid had tho latter half of the day to herself. In tho morning ono or the other of the daughters of ho household prepared tho necessary number of sandwiches thin, crust Jess and flllod with chopped celery, wator-cress, grated cheese, chopped nuts or some slmplo mixture. Theso wero piled on a plato and covored with a napkin wrung out of cold water; this was folded under the plate and kept its contents in perfect condition. With this there may or may not bo sotno cold dish which, with tho dessert, is also niado In advance. Neat, thin slices from tho cold roast, prettily garnished with parsley or lettuce and accom panied by such rollshos as horse-radish, sliced cucumbers, olives, plm olas, chutney or mayonnaise, are al ways woll received. Choosy crusts or wafers may also accompany any cold fish or meat, Tho hot dish should bo. by proforouco, ono which can bo stcamod or otewod, as frying will Impart an odor to tho clothes, whllo baking unless ono has a gas "vwir Supper oven presupposes cdnslderablo at tention to the flro or too long a time in tho kitchen. Anything prepared In the chafing dish Is suro to bo ap ropos, and In very hot weather tho coffee may bo supplanted by some Iced drink. From the following list It ought to bo posslblo to Belect a few dishes which, sorvod singly, would provide a repertoire for tho summer at least: t Creamed meats, fish or eggs. Little tlmbales of fish or meat. Providing ono knows how to make two or threo good sauces, a wide, ana meat, season appropriately, ana range of dishes is at once possible. oeat liard for a moment. Fpr all llght-colbred sauces put but ter and flour Jn the saucepan or chaf ing dish and heat until blended, but uncolored. Add gradually to this tho liquid, and stir until the mixture is smooth and as thick as very heavy cream. A half tcaspoonful of salt and' a quarter tcaspoonful of popper s- the usual allqwaneo when tho liquid contains no seasoning. Brown sauces requiro a somewhat larger proportion of butter and flour ono heaping tablespoonful of each to tho half pint. Brown tho butter first, udd tho flour, and brown ngaln, thon finish ns before. Variations aro given to theso sauces by tho use of season ings and combinations of liquids as, half cream and half chicken stock gives a bechamel sauce, whilo tomato sauco becomes a Creole, Cuban or Spanish by tho free use of onion and chopped green pepper. In llko man ner, a plain brown sauce is convert ed into sauce supremo by tho addi tion of olives anJ shorry. N In mixing sauces and such solids as diced cold meats, fish or hard boiled eggs, allow twice as much of tho prepared solid as you have of tho sauco; thus, one cupful of cream sauco wpuld bo sufficient for one pint The Best Family Medicine. Melt two table spoonfuls of butter in saucepan, or chafing dish, and add to it tho cut lobster, crab, chicken or other fish or meat about ono pint and cook slowly for 15 minutes, seasoning with a half tcaspoonful of salt, a dash of cayenne and four tablospoonfuls of Bherry. Beat the yolks of four eggs, aa to them a scant pint of cream, and turn into the hot mixture. If the chafing dish is In uso, it is well to slip tho hot-water pan underneath, that the eggs may not cook too quickly. As soon as tho sauce thick- ' ens extinguish the light or take .from the fire. With enough small tlmbale molds to go round, fish or meat -tlmbales can be quickly prepared. Break up fine enough of the crumb of a stale loaf to measure one packed cupful; tako an equal quantity of finely chop ped meat or fish. During tho coming week Governor Cummins will visit Pittsburg Landing, Tonn., whero he will present tho arguments of the Fifteenth and' Sixteenth regi ments of Iowa in regard to the loca tion of tho Iowa monumentB' be'foro the Shiloh commission. Governor Cummins secured the rehearing af ter presenting the arguments of tho Iowa soldiers before the secretary of war. Sfnco then tho old soldiers have been busy securing additional ovldonco to substantiate tho argu ment advanced by Governor Cum mins, showing that tho Iowa regi ments were in tho thick of the fight.
