They are a haidy cattle anil fine beef stock. We found ftoni opt herd tint about pounds of milk would produce one pound of butter, and 10 pounds of milk, one pound of chce-e. Of course, many of the herd will go beyond this, but it is an extra herd that cm do better and keep it up for three or four months. Tho air, the water and the pastures hero are especially fav orable for producing fine cheese aud butU-Tofa rich color and a flavor that can rarely bo surpassed; yet this Is done with half the labor re quired to produce the amount in the eastern states.
