How ever, the designs should be large enough that a small child can not put them in his mouth. Call the design what it re presents and you help build the child's vocabulary. For ex ample, if it represents fruit, call it by its name. The young child can also learn the word magnet, that it will only work on metal and that only one side is magnetized. And Vegetables Blanching in boiling water is recommended for nearly all types of vegetables before they are frozen, according to Helen Conner, Malheur County Exten sion Home Economist. After the vegetables are blanched, they should be cooled quickly in ice water and put in the freezer Immediately. Blanching is necessary because enzymes in the vegetables make the pro duct continue to ripen slowly, even in the freezer. This can result in an over mature pro duct after it’s been stored in the freezer for a period of time. The enzymes, however, are quickly killed in boiling water, so the product will not continue to mature after blanch ing. Some varieties of vegetables and fruits have been developed especially for freezing. A com plete list of these, as well as suggested blanching times for vegetables, is available at the Malheur County Extension Office in Ontario. Most fruits may be success fully frozen. Homemakers may choose fruits without sugar, in a sugar syrup, or with granu lated sugar added. Some fruits, such as peaches and apples, are best if ascorbic acid or vitamin C is added to prevent the frozen fruit from darkening. With all frozen products, it is best to freeze only a few packages at a time and spread them out so cold air can cir culate around each package, Mrs. Conner said. Large amounts of food piled all to gether in the freezer may take several days to freeze com pletely and can result in a poor quality or even spoiled products.
