Add salt and beat to a foam. Add cream of tarter beat- ing eggs stiff but not dry. Fold in the sifted sugar, also the flour which has been sifted four times. Pour into ungreased pan and bake in a slow oven for 50- 60 minutes. Both angel and sponge cakes should be baked at a very low temperature if they are to be tender. This is because they contain a large pro portion of eggs, which are made tough by cooking at a high tem perature. Both angel and sponge cakes should not be removed from the pan until they are cooled and stiffened to the point where they will not collapse when handled. For angel cakes, the folding process begins with the first ad dition of the sugar to the whites of the eggs and is repeated af ter the addition of eacn succes sive portion of sugar seemingly combined, the folding I- continu ed for a short time longer, as we work for about 2 minutes.
