It may not be gene rally known that some brands of ton. <lensed milk are made from skim milk, but such is the case, notably some of the brands made in Switzerland. After the milk is skimmed it is condensed, and when this is done when it is sweet it makes very palatable food Now reports come that the analysis of one of the lead ing brands of condensed milk showed a fat content of V/2 per cent, while average milk should have 4 percent. F. W.Woll, of the Wisconsin experiment station, hints that they must have cream separa tors in their factories and get a double income from their milk—first from cream sold, and then from the skim milk con densed ami sold as whole milk. It would not be so bad if the milk sold was used exclusively by adult persons, but this particular brand is extensively advertised lor the 11st of infants. Now it i < well known by those who have made a specialty of infant diet and its proper c mposition that the average cow’s milk is deficient in fat as compared with the sustenance that the child’s mother fur. nishes, and to make it come nearer that in composition cream is added to it. When in condensed milk two thirds of the cream is taken out before it is con densed from milk, where more should have been added, then the extent of the robbery of the bottle-fed infants can be computed. It would seem incredible that any set of men, to make a few more paltry dol lars, should so disregard the health ami lives of the rising generation. Prof. VVoll admits that this analysis of this brand of milk, as several other tests made by different parties and in different places showed a full content of cream in this brand of milk. Manufacturers of such an article as condensed milk cannot be too careful to keep it up to its old-time reputation. The demand for condensed cream and its extensive manufacture must be respon sible for a large amount of cheap con densed milk being put on the market. After the cream has been separated from the milk it is canned and put up, leaving all the skim milk to be disposed of in other wavs. The temptation to con dense it and put it in cans must be great, and as one likes to buy skimmed con densed milk the manufacturers do not take the pains to inform the buyer that what they are offering them is milk de prived of its cieam, it is still condensed milk and as such is sold. As milk is handled at creameries three- fourths of its value in a commercial point of view goes into the cream side of the s parator, the remainder represented by the skimmed milk representing the other fourth. When skim milk is condensed it is sold for but a small margin to the con sumer less than milk made from whole milk. By the above comparison the ex tent of the fraud when the skimmed arti cle is sold can be estimated, Condensed gkim milk has a place when it is sold for what it is and the necessity of pure food laws can be seen from this. Yet this ts only one of the many frauds bv which a confiding public is swindled and imposed upon. __________________ Damage from | I I I Drouth While the damage from the floods in the west is estimated at many millions, the disaster is small as compared with the estimated injury from the drouth in the eastern states, which destroyed practically all vegetation and left that entire region almost barren of vegeta tion. According to reports, New Eng land has never in all its history suffered ho severely from drouth as it has this Hummer and the conditions there are at this time of the most unfortunate char acter. The Springfield Republican says that people do not realize the extent ot the losses being incurred by the drv sjiell nnd it refers to calculation« made by the secretary of the Boston Home Mar- ket club ns showing what that section of the country has suffered from this season’s drouth. The figures compiled by this trustworthy authority show that there has already been a loss to New England agriculture amounting to con st d rablv over $100.000 nnd it is probable that this sum will I k * found to I m * considerably inside the real amount. In reference to this the Spring, field Republican says ; “ This is not all. What is true ot New England is equally true of all eastern New York stale and .New Jersey, where farmers are selling off their livestock ami pre paring for a season of great scarcity.” There is nothing sensational or over drawn in this statement of the condi tions in the eastern states. The drouth in that section has been of the most destructive character and it will pro bably be found that the losses to farm ers there are even greater than is now estimated. The drouth has been unprecedented, so far as any record shows, and certainly this is the case as to the extent of injury done. More than ever before, therefore, the east will be dependent upon the west for its supply of vegetables, which means more remunerative prices to the farmers of the west for all of their products.
